Mustard seeds. 3-4 Green chilis or 1 - 2 Tsp. Red chili powder. 2 Cans of chopped tomatoes 1 red pepper, deseeded and sliced ½ green pepper, deseeded and sliced 1 Inch finely chopped ginger or 1-2 Tsp. ground ginger. 1-2 Tbsp. Garam Masala or Madras curry powder 1 Cup Chicken stock or 1 Tbsp. chicken or mutton powder from Indian grocery store. 1 Tbsp. Ground Coriander. 1 Tbsp. Ground Cumin. 1-2 Tsp. Turmeric. Handful of chopped cilantrocoriander for garnish. Salt and black pepper to taste. 2 Tbsp. Melted butter optional. Juice of 1 or 2 limes optional.Method: In your large skillet or wok and heat your ghee or cooking oil of your choice. Now add your mustard seeds to the oil and fry on medium until the mustard seeds pop. Then add your ground coriander, cumin, turmeric and let fry for 30 seconds on medium low to medium. Then add your slivered onions to the wokskillet and fry 2-3 minutes until the onions are translucent and browned lightly. Then add in your garlic, chilies or chili powderflakes and red and green sliced bell peppers and fry for 2 more minutes. Now add in your chicken thighs and chopped tomatoes and cook for five or so minutes. Add chicken stock a little bit at a time to keep the sauce from burningsticking to bottom of wokskillet. You want the sauce thick but not to burn. Add in your garam masala now and mix in well. Add your chicken masala powder now if using it and mix in well. Now reduce the heat until the mixture is just simmering. Cover the pan with a lid offset and simmer for 20-30 minutes, stirring occasionally and adding a tablespoon of chicken stock every so often if the mixture appears too dry. Just before serving add your butter or ghee and mix in well. Then add lemon juice and mix in well. adjust salt and black pepper. Serve on white rice or even cut up boiled potatoes.

Chicken Thighs Rosemary-Maple Pan SauceServes 4Ingredients2 slices bacon 1.5 lbs boneless, skinless chicken thighs 1 teaspoon salt, divided 34 teaspooon black pepper, divided 1 shallot, minced 1 12 teaspoons fresh rosemary 12 cup chicken broth or stock 2 tablespoons Maple syrup 1 tablespoon butterDirectionsPreheat oven to 350 degreesIn an ovenproof skillet, cook bacon until crisp, reserving the drippings in the pan. Sprinkle the chicken thighs on each side with 34-teaspoon salt and 12 teaspoon pepper, sear in the skillet with the drippings over medium high heat for 3 minutes on each side. Place the skillet with the chicken into the oven for 10 minutes. Remove from the oven and place chicken on a plate and cover. Meanwhile, heat the skillet again over medium heat and add the shallot and rosemary to the pan drippings, cook for about 1 minute. Next add the chicken broth to the skillet and use a wooden spoon to scrape up the brown bits on the bottom of the pan. Add the maple syrup and remaining 14 teaspoon salt and 14 teaspoon pepper. Reduce the "sauce" for 2-3 minutes, and then add the butter, and stir until melted. Pour the sauce over the chicken thighs and sprinkle the cooked bacon on top before serving.

Sweet and Sour Chicken Restaurant Style

Restaurant style sweet and sour chicken. You can also make this with pork or shrimp. This takes some time in preparation but you can also use frozen chicken nuggets or popcorn chicken instead of frying your own to make it go quicker. What you'll need: 2 carrots, sliced paper thin 1 green pepper, rough chopped 12 onion, rough chopped 8oz can of pineapple chunks 1-12 lbs chicken breasts cut into 1" pieces For the batter: 13 cup AP flour 13 cup cornstarch 1 tsp baking powder 1 tsp soy sauce 12 cup water For the sauce: 1 cup sugar 1 cup water 3 Tbsp white vinegar 1 Tbsp ketchup 1 tsp soy sauce 14 tsp red food coloring (optional) 3 Tbsp cornstarch To prepare the chicken: Combine batter ingredients in a large bowl. Add chicken pieces to batter and stir to coat. Fry in 350* vegetable or peanut oil for 5-6 minutes or until golden brown and chicken is cooked thoroughly. Drain on paper towels and set aside. To prepare the sauce: Stir all ingredients together and set aside. In a large skillet or wok, heat 2-3 Tbsp oil over medium-high heat. Add carrots, green pepper and onion. Stir fry for 3-4 minutes until just done. Do not brown. Add the sauce mixture and pineapple. Bring just to a boil to thicken. Add chicken pieces and stir to coat. Serve over white or fried rice and enjoy! ***if you use frozen chicken nuggets or popcorn chicken, precook before adding to the cooked sauce.

Enjoy this amazing dish and your biggest worry will be how to stop eating...Prep Time: 20 min Cook Time: 20 min Serves: 4Ingredients:Boneless Skinless Chicken Thighs - 1lb (approx 12 kg) Salt - to taste Pepper- to taste Cornstarch - 1.5 tbsp Dry Red Chilli - 4-5 or to taste, cut Oil - 4 tbsp Ginger - 2 tbsp, minced Garlic - 2 tbsp, minced Green Chillies - to taste, slit Onion - 12 medium, chopped Red Bell Pepper - 13rd, chopped Yellow Bell Pepper - 13rd, chopped Green Bell Pepper - 13rd, chopped Soy Sauce - 3 tbsp Sambal or Chilli Sauce - 2 tbsp or to taste White Vinegar - 1 tbsp Spring Onions - 2 sprigs, cut diagonallyMethod:1. Wash the chicken well and lightly sprinkle Salt, Pepper and Cornstarch. Mix well and set aside. 2. In a wok-style pan, heat Oil on medium-high heat. 3. Drop the Chicken in so as to not let it clump, separate the pieces so they get coated in Oil and get evenly coated. 4. Cook uncovered stirring frequently. Allow the Chicken to cook all the way through. 5. To check, cut a piece of chicken and if there is no pink, it's done. 6. With a slotted spoon, pull the chicken to the side, drain all the excess Oil and keep aside. 7. In the same Oil, add in the chopped Dry Red Chillies and cook for 30 seconds. 8. Add in the Ginger, Garlic and Green Chillies, mix and cook for a minute. 9. Add in the Onion and the Bell-Pepper and cook for another minute or so. 10. Add in the Soy Sauce, Chilli Sauce and the Vinegar. Mix. 11. Add the Chicken. 12. Cook until the sauce coats the Chicken and the Vegetables. 13. Once done, turn off the flame and add in the Spring Onions. 14. BBQ sauce, 12 C Honey, 2 tsp. Mustard, 2 tsp. Worchester sauce and if you like a kick add 18 tsp. hot sauce.. Cook in a slow cooker aka crock pot on low for 6 hours and that's it... you don't even have to ever lift the lid until it's done!! Using a kitchen scissors cut off the edges of the slices of the bread. 2. With the help of a roller pin flatten the bread slices by rolling them. MAKING 3. To make jam sandwich rolls, spread some jam on a prepared flattened slice of bread and roll tightly. 4. To make a cheese and mustard sandwich roll, spread mustard liberally on a bread slice and place a cheese on it. Roll tight and set aside. 5. To make coriander chutney and carrot rolls, spread some coriander chutney on the bread slice, place a slice of cheese over it and then some grated carrot on one end. Roll tightly from the end with the grated carrot. SERVING 6. Cut and serve sandwich with tomato ketchup. TIPS The sandwich rolls may be toasted in toaster oven or a regular oven or served as it is. They can also be cut into 1 - 2 inch width rolls. Other variations for the filling may be used such as peanut butter and jelly or any pesto of your choice.
