Similar to Kabsa, the main difference is the method of preparation. Mandi needs to be cooked very slowly over a long time. Traditionally the rice, spices and water is cooked together in special clay ovens that are built into the ground (Taboon). Live, hot coal is placed on top as well and no steam is allowed to escape till the dish is cooked. The word 'Mandi' is a derivation of an Arab Word 'Nada' which means 'Dew' and reflects upon the dewy or moist nature of the cooked meat.SImply put, there is no way you can make A Real Mandi Dish at home, unless you have a hole in the ground made of clay. However modern day techniques can give you just about the same taste and flavors. Using a slow cooker for example, gives great results. I use a Thermal Cooker to do the cooking and keep the dish warm till serving time. Of course, you can do the same on the stove top. Just cook on very low heat with a tight fitting lid.Also, the method of placing a live piece of charcoal to smoke the dish. Place the red hot coal that has turned white inside the dish once cooked (in the centre inside a steel cuptumbler containing olive oil -- the coal, not touching the rice or meat). It will immediately create smoke. The pot containing rice is then covered so that the smoke fills up the pot, smoking up the rice and meat to get some of that smoky aroma that develops in 'Taboon' Cooking.

Prendere un’altra bacinella e riempirla d’acqua fredda, aggiungere acqua calda affinché sia tiepida. Versare la farina con un passino in un altra pentola per la Kasherut in modo tale che non ci siano insetti. Versare l’acqua semola e il lievito e tutti gli ingredienti sia del contenitore piccolo che del contenitore piu grande in quest’altra pentola e iniziare a impastare con le mani affinché non ci siano grumi. Aggiungere un bel po’ d’acqua dalla pentolina e continuare a impastare. L’impasto diventa senza grumi impastando con le mani ma volendo si può mettere in un frullato. Si lascia lievitare almeno 30 minuti. Prendere due padelle e spalmare uno scottex colloso sulla padella. E versare con il cucchiaio tutto l’impasto sulla padella. E far cuocere. La particolarità sono i buchi dell’impasto, è importante che la padella sia erta e di teflon. Quando è pronto il pane, toglierlo e bagnare la pentola con acqua fredda dall’esterno in modo che il pane non bruci e poi rimettere l’impasto e cuocere nuovamente per cuocere altro pane. This is recipe is very close to the authentic injera. You can served this Ethiopian flat bread with anything, soup or stew (Doro wat, tibs wett or ayib). The bread has a sour and spongy taste. The sour taste come from the fermentation which takes 2 to 3 days depending on how sour you want the bread. For Injera without teff, you will need: 2 cup of self rising flour, ½ cup of whole wheat flour, ½ cup of cornmeal, 1 tsp active dry yeast and 2 and 12 cup of water. For injera with teff you will need: 3 cups Teff flour, 1 tsp active dry yeast and 3 cups water. Direction:In a large bowl mix everything together to make a batter. Next set aside for fermentation to take place, takes 2 days,(but If less sour taste is preferred, you can bake it after 24h) After fermenting the batter, you can pour and discard the water that will rise on the top but I prefer to mix all together. Next in a blender, add 2 cup of the fermented batter at a time with 2 drop of water and blend together. The batter should be quite thin after you done. Then let it sit for another 20 min. Next heat a Non-stick pan or skillets (Taditionally an Injera maker is used) without oil and pour the batter then quickly spread it in the pan . Bake it for 45 seconds, then stop the heat and close to steam the bread for another 45 seconds. Do not turn over, you will see bubbles appear all over the top. Remove and let it cool down in a clean cloth. Then serve with your stew and enjoy!!!!!!!!!!!!!
