NilupakIngredients: 1 kilo cassava (kamoteng Kahoy) ½ cup white sugar 1 cup grated coconut (optional) ½ cup condensed milk ½ cup margarine, melted Violet food color (optional)Procedure: 1. Peel, cut and wash the cassava (kamoteng kahoy) 2. Put cassava in a pot and fill in with water. Put a pinch of salt. Then boil until its soft. 3. Mix grated coconut and sugar. 4. Pound or mashed the cassava. 5. Put pounded cassava in a bowl and gradually add the coconut-sugar mixture and pound it, to mix it in. Repeat until you finish all the coconut-sugar mixture. Add condensed mil and mix. Then add melted margarine and mix thoroughly. 6. Divide the cassava mixture. Mix well. Buttered the baking dish. 7. Put the violet cassava mixture on the baking dish and spread all over the surface. This is the best Cassava Cake I've ever had. I've been making this cake for years and have perfected the recipe. It only consists of grated cassava, coconut milk, sweetened condensed milk, sugar, vanilla, salt, and butter. The cake is dense, chewy, coconutty, not too sweet and so addicting.2 pckgs (32 oz or 4 cups) grated cassava, thawed 1 can (1 ¼ cup) sweetened condensed milk 1 ¼ cup coconut milk 2 tsp vanilla extract 1 ½ tbsp sugar 2 tbsp unsalted butter (melted) Pinch of saltUsing a cheesecloth, squeeze as much of the liquid out of the grated cassava as possible.Place the cassava into a food processor. If there are any thick pieces of root stem, just discard them. Grind the cassava in the food processor for a couple of minutes. Stop and scrape down the side a few times. (this step ensures that the cake is dense and smooth)Preheat the oven to 375In a large mixing bowl, whisk together the coconut milk, sweetened condensed milk, sugar, melted butter, salt, and vanilla until combined.Slowly whisk in the finely ground cassava. Just like adding flour to a cake batter, it's important to add in batches. The batter should be thick but fairly smooth.Grease a 9-inch baking pan, line the bottom with parchment paper. Pour the batter into the pan. Bake for 40 min. Then broil under 450 degrees for about 5 more min. Cool for about an hour. Store at room temp for up to 2 days or in the fridge and microwave before eating.NOTE: Every oven is different so yours might take longer or shorter to be done than mine. When you turn the oven on broiler to brown the top, make sure you keep an eye on it. Filipino Pancit Recipe

Here's a recipe I just copied from the internet. Like I said on my video I showed you the approach to cooking the filipino pancit. You can either add the shrimp, pork, chinese sausage or chicken or all of the above. :) Then the basics of the vegetables are: celery, green beans andor snap peas, carrots, cabbage, onions and garlic. Add some Chicken broth along with soy sauce and that's it. :-) There are various recipes on-line. :)Pancit Bihon Recipe Ingredients 1 lb pancit bihon (Rice Noodles) 12 lb pork, cut into small thin slices 12 lb chicken, cooked, deboned, and cut into thin slices 18 lb peapods or snow pea 1 cup carrot 12 small cabbage, chopped 1 cup celery leaves, chopped finely 1 medium sized onion, chopped 12 tbsp garlic, minced 1 pc chicken cube 5 tbsp soy sauce 3 to 4 cups water Cooking Procedure In a large pot, Saute the garlic and onion Add the pork and chicken then let cook for 2 minutes Add the chicken cube and water then simmer for 15 minutes Put in the carrots, peapod, cabbage, and celery leaves and simmer for a few minutes Remove all the ingredients in the pot except for the liquid and set them aside In the pot with the liquid in, add the soy sauce and mix well Add the pancit bihon (makes sure to first soak it in water for about 10 minutes) and mix well. Cook until liquid evaporates completely Put-in the vegetables and meat that were previously cooked and simmer for a minute or two Serve hot.
