Misture o pão com a ponta de peito moída, 1 ovo, manteiga, 4 colheres de parmesão ralado, 50g de bacon picado, 1 12 colher de suco de limão e misture tudo até obter uma massa homogênea. Tempere com sal, pimenta e noz-moscada e misture novamente. Separe 13 da carne e abra na palma da mão e coloque a fatia de muçarela. Feche bem e modele. 7 Cup Burfi Indian Festival Sweet

Most festivals are about traditions and about families coming together. In India, they are also about eating. Families coming together, making sweets, laughing, sharing and enjoying their time together. Diwali is a festival that is pretty much that and with so much to do, an easy recipe is like a God-send. Soumya shared her Grandmother's recipe with us which she would make for Diwali- so there is tradition, sharing and lots of love in this recipe. ==================== Ingredients: Chickpea Flour (Besan) - 1 cup Sugar - 2 cups Heavy Cream - 1 cup Clarified Butter (Ghee) - 1 cup Shredded Coconut - 1 cup Choice of Dry Fruits - 1 cup, choppedMethod:1. Put the the Chickpea Flour in a heavy-bottomed pan and roast on medium-low heat till it releases a fantastic aroma. Kepp stirring. 2. Once done, transfer the Chickpea Flour into a dish and keep aside. 3. In the same pan on medium heat, melt the Ghee and add in the chopped Dry Fruits and the shredded Coconut. Mix. 4. Add in the Chickpea Flour, Sugar and Heavy Cream. Mix well. 5. Keep mixing to ensure there are no lumps and allow the mixture to come to a boil. 6. Once it starts boiling, reduce the flame to a low and keep cooking till the mixture thickens and leaves the sides. Stir continuously. 7. Meanwhile, grease a tray or a platter to set the Burfi in. 8. Once the Burfi has thickened and has incorporated well, transfer the mixture onto the greased tray. 9. Garnish with dry fruits or with varq and allow to set in the fridge for at least 2 hours. 10. Take out and make pieces with a greased knife and put it back in the fridge. 11. Allow to set for for another 5-6 hours. 12. this is kind of restaurant style of preperation of birtani they wont do dum process they cook chicken saperatly with same masalas which we use for biryani and rice will be cooked saperatly if the ordre comes they mex rice and chicken togeather and serve because the same rice can also used for vegetarins.Chicken 1500 kg Basmati rice 500g Bay leaf 3 n Star anise 3 n Cinnamon sticks 2 n Cloves 4 n Cardamom 6 n Shahi jeera 1 ts Lichen (kalpasi) 1ts Pepper corn 6 n Mace 2 n Golden fried onions 150 g Red chilly powder 2 tb Coriander powder 1 tb Cumin powder 1 ts Ginger garlic paste 1 tbs Salt Turmeric Yogurt 1 cup Coriander chopped 1 b Mint chopped 1 b Green chilly 5 n Oil ½ cup Lime juice 2tbFirst make a powder of all the spices,Take a bowl add chicken pieces and add made masala, chilly powder, ginger garlic paste, turmeric, salt, coriander powder, curd, chopped mint leaves, coriander leaves, fried onions, green chilly, lime juice, oil, and mix it well, and put it in the refrigerator over night, Heat water in a vessel and let it come to a boil add oil, salt, Shahi jeera, bay leaf and add basmati rice (soak the rice 1 hour) cook the rice till 70 %, add layer of chicken marinate and then this layer of rice. Sprinkle fried onions, and add dissolved saffron strands in milk , then add ghee (optional), kewra water, rose water and put the lid on which is lined with sticky dough for dum. First cook it on high for first 4-5 minutes then reduce the flame to low, use a griddle under this for even heat transfer. And cook it for 25 to 30 min and switch off the flame. After 40 minutes this is ready for opening the seal of the lid. For the bati: In a large mixing bowl, add and combine together wheat flour, rava, cumin powder, carom powder, fennel powder and salt to taste. Once mixed well, stir in the ghee, yogurt and mix well into a grainy texture. Slowly pour water and knead the grainy texture well into a firm dough. Cover the dough and set it aside for about 30 minutes. 2. For the churma: In another large mixing bowl, add and combine together wheat flour, rava, and ghee into a grainy texture. Slowly pour in the milk and knead the grainy texture well to make a stiff dough. Cover the dough and set it aside to rest for about 30 minutes. 3. Preheat the oven to 350 degrees F for the bati and churma. MAKING 4. In a pressure cooker, heat the oil and add mustard seeds, dry red chillies, cumin seeds, turmeric powder, onion, green chilli paste, garlic paste, ginger paste, salt, curry leaves, tomato, mixed dal with the water and garam masala. Mix until well incorporated and cover the cooker with the lid. Cook the dal for about 4 whistles. Once done, set it aside and let the pressure inside the cooker come down. Once the pressure is down, open the lid add lemon juice and mix well. 5. Take the dough for the bati and pinch lemon sized balls. Make the texture of the balls smooth and then flatten it. Once done, make a thumbprint in the center and place it on a baking sheet. Repeat this step until all the balls are made and line them about 1 inch apart on the baking sheet. 6. Take the dough for the churma and break into half. On a wooden board, place the dough one at a time and using a rolling pin, roll out each dough into a flat roti. Once done, set these rotis alongside the bati's. 7. Bake this tray in the preheated oven at 350 degrees F, for 15 - 18 minutes or until golden brown. In between the baking time, turn the rotis and bati's over once in order for even baking of the two. 8. Once done, remove the rotis and set them aside on a plate to cool them down. Remove the baked bati's onto a serving plate and brush them evenly with melted butter. 9. Once the rotis have cooled down, break them into small pieces and put them in a food processor. Blend this into a grainy texture for making the churma. Once done, transfer it into a mixing bowl and add the cashew, pistachio, almond, cardamom powder and sugar. Mix well. Stir in the ghee and mix until well incorporated. SERVING 10. On a large serving plate or tray, place the bati plate and two bowls. In one bowl, add the churma mixture garnished with some almond, cashew and pistachio. In the other bowl, add the cooked dal garnished with coriander leaves and serve hot.
