Five Rules For a Perfect Steak

Don't sweat cooking steaks...they are really pretty easy. Here are 5 rules that I follow for just about every steak I cook to get them to come up perfect every time. 1) Know your steak: Filet, New York, Ribeye, etc, all have different qualities and subtleties that you should account for to cook them perfectly 2) Season the Steak well: Most people don't use enough salt & pepper. Don't skimp 3) Get a good sear on both sides: Use a hot pan to get the steaks browned on both sides, without over cooking the center 4) Know your doneness: Use the hand pressure technique to gauge how cooked the steak it. Or a meat thermometer. Don't cut it open. 5) Let it rest: Gotta give the steak some time for the juices to settle before you cut into it. There's lot of other tips and tricks...but these 5 rules are pretty universal for cooking a steak on the grill, in the pan, in the oven. Steak Frites Mastering the Cuts 6. Côte de Boeuf

In 6th and final part of Steak Frites - Mastering the Cuts, Henry Harris of London's Racine Restaurant babies his côte de boeuf, a prized double rib chop from butcher O'Shea's of Knightsbridge that's thick enough to stand up on its side in the pan. So massive a steak demands long, gentle cooking: As Harris bastes the côte de boeuf from the outside with an obscene amount of butter, the marbled meat self-bastes from the inside with its fat. Smoked Spare Ribs The 3 2 1 Method

We are smoking a St. Louis trimmed slab of spare ribs using the 3-2-1 Method. This involves three steps that we outline in the video. I'm using Wolfe's bold rub (http:tinyurl.comyde6zhe) and my Lime BBQ sauce. It's Kansas City Style and available at http:barbequesaucerecipe.netThey quit making the Pan Saver bags I used, instead I simply wrap tightly in foil.tumbleweedglass@stx.rr.comI've been experimenting with the timing. I still smoke at 225F for 3 hours. Then things change. After placing in foil, the ribs are cooked for another hour to 1.5 hours. I then unwrap, coat with sauce and place on my grill to set the sauce. I have been using my sear burner on my grill at around 800F to quickly set the sauce and add some color. The knife is a RH Forschner 47543, now made by Victorinox, 12 inch, 10 would be better.
