The marriage ceremony in Bannu Locality is unique throughout the world not only for its traditions and customs but also for its dishes especially the well known "penda" and "wresha" (halwa). For the penda to prepare, a special type of bread (chapati or roti), which is very large, thin and delicious, is made from common flour. This sort of bread is called postha (singular) or posthi (plural) in local Pashto language. Only one bread maker with only one assistant is able to prepare bread for several hundreds people for whole of the gathering participating in the marriage ceremony. I don't know whether such type of bread is also prepared elsewhere in the world or otherwise but if not then it must be included for its largeness and thinness in the Guinness Book of Word Records.

Naan is a traditional north indian bread which is made in coal fired clay kilns called tandoors.. i have bought some domestic electric gas tandoors and have thrown them away .. here is one way you can make naans in your home using an ordinary saucepan which will work satisfactorily . you dissolve some dry yiest in warm sugared water and use this to make a dough of maida, along with some curd and salt.. set this aside for about 2 hours to levitate.. then take a small ball and roll out a roti from it.. take this roti and STICK it onto a very very hot aluminum saucepan ( as shown in the video ), wait for some time till the naan starts to cook due to the heat of the pan .. then invert the pan over the gas flame holding the pan in your hand and cook the naan .. after the naan is cooked take out from the pan, cool and EAT ! Note: Be sure that the naan is properly stuck to the pan.. else it would fall off onto the stove when you are cooking it. also stick the roti to the pan after lifting it off the heat and wait a few seconds so that the heat of the pan begins to cook the naan from the stuck side .. then invert over the flame ..naan is preferably had with dry side dishes.. also you can make tandoori rotis the same way .. except you use ordinary wheat flour and salt for the dough ..

Detail recipe - Notes about ingredients - How to make soft idly1. If idly rice is not available, you can use ponni rice instead . Freshly cooked rice speeds up the fermenting process. If you are going to use batter within 8 hours you can use freshly cooked rice to speed up the fermentation.. but natural fermenting will occur within 12 hours, no need to add cooked rice for that. 2. You can use whole urad dal or splited urad dal . But follow the cup measurements strictly. 3. Adding fenugreek seed is my Aunt's method. since my result is good I 'm following the same without knowing the reason. 4. If available use sea salt to get good fermented batter. Idly batter preparation - How to make soft idly1. Use fresh water ( not salty tab water ) to rinse the urad dal and rice. Soak them for one hour . Then place both urad dal and rice in refrigerator for another one hour. If your grinder is a table top wet grinder you should follow this tip strictly. But for single stone grinder no need to follow this step and this single stone grinder is the best choice for idli lovers. Within 30 minutes of grinding batter will turn hot in table top grinders. We need at least 1 hour to grind both rice and urad dal. Hot batter won't ferment well naturally. So it is good to keep the rice and urad dal in refrigerator for 1 hour before grinding.2. Use the water for grinding in which urad dal and rice has been soaked. Don't discard soaked water. First grind urad dal till you get PUFFY and fine batter. Shift it to a wide container. Then grind rice with 4 tbsp of freshly cooked rice. Shift this rice batter into the same container in which urad dal batter is. 3. Add salt ( prefer sea salt kal uppu if available ) and mix it well with your clean hands ( to speed up fermentation ) Usually urad dal batter is at the top most layer while the rice batter sets at the bottom when mixing. Mix both the batter thoroughly. Otherwise idlies from top most layer will be like dosa, and from the bottom it will be like a tennis ball. Mix thoroughly.4. Set it to rest without interrupting for 8 hours ( i have added freshly cooked rice, so 8 hours is enough ). If you are going to store this batter, cover it properly and place it in refrigerator. Before making idlies take this batter out and set it in room temperature for 10 hours ( it will take 2 hours to reduce to room temperature and 8 hours to ferment ) How to make soft idli - method1. Fermented batter is ready to make idlies. In rainy season fermenting time will take extra 2 hours. BEFORE MAKING IDLIES DON'T STIR THE BATTER. If you are not going to make idli after fermentation just keep it in refrigerator as to avoid over fermentation.2. For making idlies, boil water in a idly pot ( it should be steaming hot ) and place the idly plate mould over it, fill each mould wiith a ladle of batter and cover it. Let it cook for 7 to 10 minutes.3. Check it out whether it is done , take sharp knife and insert it in a idly , if the knife comes out clear without any fresh batter, idlies are cooked well.4. Soft idlies are ready, There are so many side dishes for idly, serve any nice side dish with your soft idly especially with the great coconut chutney.

VOIR CI-DESSOUS LE FRANÇAIS.édients: (cs est cuillère à soupe; cc est cuillère à café) (1 mesure = 237 mL = 2.4 dl; 1 cs = 15 mL; 1 cc = 5 mL); mesures à rasPain nid d'abeille: ⅔ mesure (158 mL) de lait 2 cc (10 mL) de Levure Instantanée 1 cc (5 mL) de Sucre 2 mesure (280 g) de Farine Blanche 3 cs (45 mL) de Sucre ¼ cc (1.25 mL) de Sel ¼ cc (1.25 mL) de Levure Chimique 3 cs (30 mL) de Beurre (fondu) ¾ mesure (170 g) de Cream Cheese (6 oz) 1 cs (15 mL) de Beurre -- Pour le plat 2 cs (30 mL) de Lait -- Pour dorerSirop: 1 mesure (200 g) de Sucre 1 mesure (237 mL) d'Eau ½ cc (2.5 mL) de Jus de CitronInstructions:Étapes pour préparer le pain: 1. Assembler le lait tiède, la levure et une cuillère à café de sucre. Bien mélanger puis laisser la levure activer pendant 10 minutes. 2. Dans un bol, mélanger la farine, le sucre, le sel, le bicarbonate, et le beurre, puis ajouter le mélange de levure. 3. Mélanger les ingrédients de la pâte puis pétrir pendant 5 minutes. Couvrir le bol avec un torchon humide et laisser la pâte lever pendant une heure. 4. Couper la pâte en deux et former des cylindres avec les deux morceaux. Couper chaque cylindre en 16 morceaux égaux. Vous obtiendrez 32 morceaux de pâte. 5. Aplatir chaque morceau de pâte avec les doigts et poser une demie cuillère à café de cream cheese dessus. Vous pouvez utiliser des pommes cuites (ou le fruit de votre choix), un carré de chocolat, du beurre de cacahuètes, de la pâte de dattes, des raisins secs, de la noix de coco sucrée, etc. 6. Recouvrir le fromage avec la pâte comme montré dans la vidéo, former une boule en la roulant entre la paume de vos mains. 7. Poser les boules de pâtes sur une plaque graissée de 9 pouces ½ (24cm), en les espaçant uniformément. 8. Brosser le dessus des boules avec du lait. 9. Cuire 20 minutes dans un four préchauffé à 380°F193°C. Après la cuisson, verser un sirop de sucre fait avec une mesure de sucre, une mesure d'eau et une demie cuillère à café de jus de citron, bouillis ensemble 10 minutes. Vous pouvez aussi servir ces pains délicieux sans sirop.
