The pork chops are super tasty and the gravy is smooth and velvety--a hearty, filling entree!Please subscribe: http:www.youtube.combettyskitchenOven-Baked Pork Chops with Homestyle Gravy1.25 pounds of boneless pork chops (about 3 or 4) meat tenderizer, to taste 1 cup flour (for dredging) ground black pepper, to taste 14 cup peanut oil 12 cup flour (leftover from the dredging) 2 cups water 1 cup milk salt, to tasteSprinkle meat tenderizer on top and bottom of all of the boneless pork chops (to taste). Put 1 cup of flour in a zip lock bag for coating the pork chops. Now, put 14 cup peanut oil in an oven-proof skillet and begin heating it. Watch it carefully, and make sure it does not burn or smoke. Now take one pork chop at a time, place them in the flour in the zip lock bag, shake the bag to coat the pork chops with flour, and place the pork chops in the heated peanut oil. Use a fork to turn the pork chops once, when they are beginning to brown, and then place the skillet in an oven that has been preheated to 400 degrees. Bake for 20 to 25 minutes, checking occasionally, and turning when it seems appropriate. When the pork chops are done, remove the skillet from the oven and place it back on the cooktop. Remove the pork chops to a serving dish. (You may want to drain any excess oil on paper toweling.) Before making your gravy, discard all of the grease from the skillet, saving only the crumbs that stick. Now, combine 12 cup of flour (leftover from the zip lock bag), and 2 cups of water in the skillet of crumbs. Stir and scrape the mixture in the skillet before you turn on the heat. Add 1 cup of milk and salt to taste, and then place the skillet over medium heat. After a bit, turn the heat to low. Continue to cook and stir, removing all lumps of flour before it gets too hot. Keep cooking the gravy until it is brown and bubbly, and add more water if it thickens too much. When it is done, pour it into a serving bowl, and serve along with the oven baked pork chops. It is sweet and salty, crispy and chewy--a delight, with even a luscious side dip!Please subscribe: http:www.youtube.combettyskitchenBetty's Version of Elvis's Grilled Peanut Butter-Banana Sandwich2 slices white or whole wheat bread 4 tablespoons butter, softened to room temperature 1 ripe banana (not over-ripe) 1 tablespoon mayonnaise 2 tablespoons peanut butter 2 slices crisp, cooked bacon (optional) 14 cup brown sugarSpread one side of each of two slices of bread with butter. This will use about 1 tablespoon butter. Place both slices of bread, butter side down, on a hot grill or skillet, and let it brown on the under side. Place the two slices of bread, browned side up, on a sandwich or cutting board. Spread one slice of the browned bread with 1 tablespoon of mayonnaise. Spread the other slice of browned bread with 2 tablespoons peanut butter. Peel a banana, and cut it in half crosswise. Cut each half into long, even slices of banana. Arrange these slices of banana on top of the spread peanut butter. Break the two slices of bacon in half, and arrange the four halves on top of the sliced banana. Now, cover the peanut butter-banana-bacon side with the other slice of bread, with the mayonnaise against the bacon. Spread softened butter on the upper side of the sandwich, place it butter side down in a skillet, and spread softened butter on the last of the four sides of the bread. Turn on the heat under the skillet, and cook slowly, until all flavors are blended, and the sandwich is brown on both sides. Remove from the skillet, and place it on a cutting board, and cut semi-diagonally into two pieces. Place on a serving dish. Garnish:Mix your leftover softened butter with about 14 cup brown sugar. Mash it with a fork until well-blended. Place the mixture alongside the peanut butter and banana sandwich, and use it for dipping the sandwich. It's wonderful! Thank ya! Betty demonstrates how to make a Boone Tavern favorite, Pork Chops "Some Tricky Way." This is the entrée that Rick ordered on our dinner out at Boone Tavern Restaurant on the previous evening. It is very easy to make and quite tasty!Boone Tavern Pork Chops "Some Tricky Way"4 lean pork chops ½ cup tomato paste ½ cup Parmesan cheese 1 cup bread crumbs 2 cups chicken stock ¾ cup mushrooms1. Trim chops and brush over to coat with the tomato paste. 2.Mix the Parmesan cheese with the bread crumbs. 3.Pat the bread crumbs onto the chops. 4.Pan fry the chops in a skillet to brown on both sides. (I used ¼ cup extra virgin olive oil in the skillet.) 5.Place the chops in a covered casserole and add a small amount of water to prevent them from sticking to the dish. Bake for 1 hour at 350 degrees. (I did not add the water to the casserole; instead, I sprayed the dish with cooking oil spray. Also, I only baked the pork chops for 50 minutes.) 6.Serve with a sauce made by thickening 2 cups of chicken stock with 2 ½ tablespoons flour which has been smoothed to a paste with some of the cold stock. Cook for 5 minutes. Add ¾ cup of cut mushrooms to the finished sauce.--Richard T. Hougen, from Look No Further.Rick and I really enjoyed this different way to cook pork chops. It is served with Great Northern beans (or any dry bean), and mixed greens (or any greens) topped with mung bean sprouts (or alfalfa sprouts). These sandwiches are lovely and elegant--perfect for any party or reception!Please subscribe: http:www.youtube.combettyskitchenOlive-Pecan Reception Finger Sandwiches8 oz. cream cheese, softened to room temperature 12 cup mayonnaise 12 cup chopped pecans 1 cup chopped or sliced green salad olives, drained (Save the juice.) 2 tablespoons olive juice dash of ground black pepper whole-grain slices of bread (as many as you need for your sandwiches)In a large mixing bowl, combine 8 oz. cream cheese, 12 cup mayonnaise, 12 cup chopped pecans, 1 cup chopped or sliced salad olives, 2 tablespoons olive juice, and a dash of black pepper. Combine thoroughly. Spread the olive-pecan mixture on one slice of whole grain bread and top it with another slice. Now, use a knife to trim the crusts off all four edges and cut horizontally and then vertically to form four identical pieces. Continue to form these finger sandwiches until you have used up your olive-pecan spread. Place the finger sandwiches artistically on a serving dish, and serve as finger food. Note: This spread may be used for full-sized sandwiches or as a dip with crackers. It is best if it is allowed to chill in the refrigerator overnight or longer to let the flavors mingle and for the spread to set up. They're terrific!!!Please subscribe: http:www.youtube.combettyskitchenSuper-Flavorful Twice Baked Potatoes2 medium to large baking potatoes cooking spray (optional) sea salt (optional) 12 cup shredded cheddar cheese 12 cup sour cream 12 stick butter, softened to room temperature 14 cup green onions, chopped 1 tablespoon fresh chopped parsley 12 teaspoon salt dash of black pepper 3 to 4 slices of crisp fried bacon, crumbled 12 cup shredded Cheddar cheese (for topping) paprika to tasteSpray the potatoes with cooking oil, and then grind some sea salt on them. Place them in an oven-proof dish and bake at 400 degrees for 1 hour. While the potatoes are baking, combine 12 cup shredded Cheddar cheese, 12 cup sour cream, 12 stick butter, 14 cup chopped green onions, 1 tablespoon chopped parsley, 12 teaspoon salt, and a dash of black pepper. Cover this mixture with plastic wrap, and refrigerate it while your potatoes cook. When your potatoes are done, split each of them into two equal halves with a knife. Since they will be hot, hold them with a potholder while you scoop out the potato meat. Place the potato meat in a dish, and reserve the potato shells. (It is important that this is done while the potatoes are hot.) Mix the potato meat with the mixture that you have previously made. Now blend in the crisp, crumbled bacon. Spoon this mixture evenly into the four empty potato shells. Sprinkle the top of each potato half with Cheddar cheese, to taste. Finally, sprinkle the potatoes with paprika, to taste. You may freeze the potato halves at this point, but be sure to thaw them before you bake them. When ready to bake, if the potatoes are refrigerated or cool, let them come to room temperature. Then bake them in an oven-proof dish for 20 minutes in an oven that has been preheated to 400 degrees. If they are cool when you put them in the oven, it will take a little longer. This is an elegant and great-tasting addition to any meal!
