The pork chops are super tasty and the gravy is smooth and velvety--a hearty, filling entree!Please subscribe: http:www.youtube.combettyskitchenOven-Baked Pork Chops with Homestyle Gravy1.25 pounds of boneless pork chops (about 3 or 4) meat tenderizer, to taste 1 cup flour (for dredging) ground black pepper, to taste 14 cup peanut oil 12 cup flour (leftover from the dredging) 2 cups water 1 cup milk salt, to tasteSprinkle meat tenderizer on top and bottom of all of the boneless pork chops (to taste). Put 1 cup of flour in a zip lock bag for coating the pork chops. Now, put 14 cup peanut oil in an oven-proof skillet and begin heating it. Watch it carefully, and make sure it does not burn or smoke. Now take one pork chop at a time, place them in the flour in the zip lock bag, shake the bag to coat the pork chops with flour, and place the pork chops in the heated peanut oil. Use a fork to turn the pork chops once, when they are beginning to brown, and then place the skillet in an oven that has been preheated to 400 degrees. Bake for 20 to 25 minutes, checking occasionally, and turning when it seems appropriate. When the pork chops are done, remove the skillet from the oven and place it back on the cooktop. Remove the pork chops to a serving dish. (You may want to drain any excess oil on paper toweling.) Before making your gravy, discard all of the grease from the skillet, saving only the crumbs that stick. Now, combine 12 cup of flour (leftover from the zip lock bag), and 2 cups of water in the skillet of crumbs. Stir and scrape the mixture in the skillet before you turn on the heat. Add 1 cup of milk and salt to taste, and then place the skillet over medium heat. After a bit, turn the heat to low. Continue to cook and stir, removing all lumps of flour before it gets too hot. Keep cooking the gravy until it is brown and bubbly, and add more water if it thickens too much. When it is done, pour it into a serving bowl, and serve along with the oven baked pork chops. Betty demonstrates how to make beautiful and tasty Baked Potato Fans. These are whole baking potatoes that have been peeled and cut into slices (almost to the bottom), then drizzled with butter, sprinkled with salt, topped with a glorious blend of herbs and cheeses and baked in the oven. They make a great accompaniment to almost any meal!Note: I made just 2 of these potatoes for demonstration purposes, but you can increase or decrease the amounts as needed.Baked Potato Fans2 medium baking potatoes ½ teaspoon salt 1 ½ tablespoons butter or margarine, melted 1 tablespoon of chopped fresh herbs (I used parsley, chives, thyme, and sage. You may use any or all of these. If you used dried herbs, use only 1 teaspoon altogether.) 2 tablespoons finely-shredded sharp Cheddar cheese 1 tablespoon finely-grated Romano or Parmesan cheese (I use Italian Peccorino Romano cheese.) cooking oil sprayWash and peel potatoes. Keep covered with water until ready to use. When ready to assemble recipe, dry the potatoes with a paper towel. Cut potatoes into thin slices, but not all the way through. Use the handle of a spoon to prevent knife from cutting all the way. Put potatoes in a baking dish that has been sprayed with cooking oil. Fan the potatoes slightly. Sprinkle with salt and drizzle with butter or margarine. Sprinkle with herbs. Bake potatoes at 425 degrees for about 50 minutes. Remove from oven and sprinkle with cheeses. Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. You can check for doneness with a fork. Serve immediately. These are very pretty when served alongside a steak or other entrée. It is sweet and salty, crispy and chewy--a delight, with even a luscious side dip!Please subscribe: http:www.youtube.combettyskitchenBetty's Version of Elvis's Grilled Peanut Butter-Banana Sandwich2 slices white or whole wheat bread 4 tablespoons butter, softened to room temperature 1 ripe banana (not over-ripe) 1 tablespoon mayonnaise 2 tablespoons peanut butter 2 slices crisp, cooked bacon (optional) 14 cup brown sugarSpread one side of each of two slices of bread with butter. This will use about 1 tablespoon butter. Place both slices of bread, butter side down, on a hot grill or skillet, and let it brown on the under side. Place the two slices of bread, browned side up, on a sandwich or cutting board. Spread one slice of the browned bread with 1 tablespoon of mayonnaise. Spread the other slice of browned bread with 2 tablespoons peanut butter. Peel a banana, and cut it in half crosswise. Cut each half into long, even slices of banana. Arrange these slices of banana on top of the spread peanut butter. Break the two slices of bacon in half, and arrange the four halves on top of the sliced banana. Now, cover the peanut butter-banana-bacon side with the other slice of bread, with the mayonnaise against the bacon. Spread softened butter on the upper side of the sandwich, place it butter side down in a skillet, and spread softened butter on the last of the four sides of the bread. Turn on the heat under the skillet, and cook slowly, until all flavors are blended, and the sandwich is brown on both sides. Remove from the skillet, and place it on a cutting board, and cut semi-diagonally into two pieces. Place on a serving dish. Garnish:Mix your leftover softened butter with about 14 cup brown sugar. Mash it with a fork until well-blended. Place the mixture alongside the peanut butter and banana sandwich, and use it for dipping the sandwich. It's wonderful! Thank ya! Betty s Sage Flavored Stuffed Pork Chops

Betty demonstrates how to make a hearty dinner of Sage-Flavored Stuffed Pork Chops. These are made with an instant stuffing mix, but if you have leftover stuffing from your holiday meal, you can use that instead.Sage-Flavored Stuffed Pork Chops½ stick butter or margarine, melted 1 ½ cups chicken broth + 2 additional cups chicken broth 6 oz. package instant stuffing (I used Kraft Stove Top Stuffing Mix—Pork flavor.) 1 teaspoon rubbed sage 2 thick-cut boneless pork chops--about 1-inch thick (You may make as many pork chops as your amount of stuffing and size of casserole dish will allow.) salt (or use meat tenderized with no MSG) to taste cooking oil sprayIn a medium saucepan, mix together ½ stick butter and 1 ½ cups chicken broth. Place over medium heat, and bring to a boil. Remove from heat. Add 1 teaspoon rubbed sage to a 6 oz. package of Stove Top Stuffing Mix. Add the stuffing mix to the hot broth. Place a lid that fits the saucepan on top of the stuffing and broth mixture, and let it sit for 5 minutes. While the stuffing is resting, you can prepare your pork chops. Take a sharp knife, and make a slice most of the way through each pork chop from the outside edge, making an open pocket in each pork chop. Salt to taste. When the stuffing has rested in the covered saucepan for 5 minutes, pack as much of the stuffing into the pork chop pockets as possible. Use a wooden toothpick to pin the opening back together, using your fingers to stuff back in any of the stuffing that spills out. Place the two pork chops in a casserole dish that has been sprayed with cooking oil spray. Bake in a 350-degree oven for 35 minutes. Bring the casserole out of the oven temporarily. Mix 2 cups of chicken broth with the remaining sage-flavored stuffing, and place the rest of the stuffing into the casserole dish around the pork chops. Return the casserole to the oven and bake 15 minutes longer. Remove and serve by placing each pork chop on a plate and surrounding it with sage-flavored stuffing. You will probably want to add some colorful cooked vegetables. I served mine with a pumpkin muffin and hot apple cider. For all soy sauce lovers, feel free to increase the amount of soy sauce in the recipe--and pass the soy sauce at the table!Please subscribe: http:www.youtube.combettyskitchenAsian Vegetables with Soy Sauce Gravy1 package frozen Asian vegetables (Any type of frozen vegetable or mix of vegetables will work.) 2 tablespoons soy sauce 1 cup water 2 tablespoons butter 2 tablespoons soy sauce (minimum)--You may increase this as desired to satisfy your taste. roasted salted cashews or chow mein noodle for topping (optional)In a medium saucepan, heat 1-inch of water to a full boil. Add the frozen mixed vegetables, and return to a boil. Cook about 3 minutes, until crisp-tender (cooked completely, but retaining their green color and not mushy). While your vegetables are cooking, prepare your soy sauce gravy. In a small saucepan, mix 2 tablespoons cornstarch and 1 cup of water until smooth. Add 2 tablespoons butter and 2 tablespoons (minimum) soy sauce. You may adjust the amount of soy sauce to your taste. Place the soy sauce mixture over medium heat, and bring to a boil. Turn the heat to low, and cook the soy sauce gravy until it is thickened and rich-looking. By now, your vegetables should be done. Drain off the water and place the vegetables in a nice serving dish. You may serve this by pouring the soy sauce gravy over the top and mixing well, or by serving into individual bowls. In either case, you may optionally add a few cashews or chow mein noodle to the top for garnish. Homemade Shake and Bake! Pork Chop Coating Recipe Noreen s Kitchen

Greetings! I decided to make some pork loin chops for dinner this evening and I was going to use the box of Shake and Bake, because it was quick and easy. I decided to read the ingredients, and while it really wasn't that bad, it still has "spices" and yeast extract and a couple other things that I figured we didn't need. So I'll put this box in the pantry and give it to the food bank when the school has their holiday food drive.I threw together this quick and easy coating mix with little effort and it was simply delicious! I used spices to compliment the pork but you could use this for chicken or even cubed steaks. It was quick easy and delicious. I will use this coating mix from now on and forgo the corporate store bought creation that is kind of expensive to begin with.You can use good quality store bought bread crumbs or some of your own homemade bread crumbs along with spices of your choice. I used about 2 cups of bread crumb and 1 teaspoon each of salt, pepper, garlic powder, onion powder, Italian seasoning and poultry seasoning. I also added 1 tablespoon of sunflower oil and blended it all up in a plastic bag until it looked just like the store bought stuff. I simply used it like I would the regular coating mix, and baked my pork chops for 30 minutes.
