In this video, Betty demonstrates how to make her Southern Oven-Baked Pork Chops with Homestyle Gravy recipe. The pork chops are super tasty and the gravy is smooth and velvety--a heart, filling entree! Ingredients: 1.25 pounds of boneless pork chops (about 3 or 4) meat tenderizer, to taste 1 cup flour (for dredging) ground black pepper, to taste 14 cup peanut oil 12 cup flour (leftover from the dredging) 2 cups water 1 vup milk salt, to taste Sprinkle meat tenderizer on top and bottom of all of the boneless pork chops (to taste). Put 1 cup of flour in a zip lock bag for coating the pork chops. Now, put 14 cup peanut oil in an oven-proof skillet and begin heating it. Watch it carefully, and make sure it does not burn or smoke. Now take one pork chop at a time, place them in the flour in the zip lock bag, shake the bag to coat the pork chops with flour, and place the pork chops in the heated peanut oil. Use a fork to turn the pork chops once, when they are beginning to brown, and then place the skillet in an oven that has been preheated to 400 degrees. Bake for 20 to 25 minutes, checking occasionally, and turning when it seems appropriate. When the pork chops are done, remove the skillet from the oven and place it back on the cooktop. Remove the pork chops to a serving dish. (You may want to drain any excess oil on paper toweling.) Before making your gravy, discard all of the grease from the skillet, saving only the crumbs that stick. Now, combine 12 cup of flour (leftover from the zip lock bag), and 2 cups of water in the skillet of crumbs. Stir and scrape the mixture in the skillet before you turn on the heat. Add 1 cup of milk and salt to taste, and then place the skillet over medium heat. After a bit, turn the heat to low. Continue to cook and stir, removing all lumps of flour before it gets too hot. Keep cooking the gravy until it is brown and bubbly, and add more water if it thickens too much. When it is done, pour it into a serving bowl, and serve along with the oven baked pork chops. A super entree!!!

Betty s Scalloped Potatoes with Cheese Recipe

In this video, Betty demonstrates how to make a large casserole of Scalloped Potatoes with Cheese. This is a perfect accompaniment to her dinner of Herbed Chicken Crunch, Sauteed Zucchini and Yellow Squash, fresh green beans from the Farmer's Market, and a large croissant! Ingredients: 6 medium potatoes, peeled and sliced 14" thick (I used Russet, but any variety is fine.) 3 tablespoons butter or margarine 14 cup flour 1 teaspoon salt 2 cups milk (for sauce) 2 cups shredded Velveeta cheese (You may substitute any variety of shredded cheese that you like.) 1 tablespoon fresh chopped parsley (or 1 teaspoon dried chopped parsley) 14 cup finely chopped onion 2 cups additional milk (for pouring over casserole to come to the top of the potatoes) cooking oil spray salt and black pepper, to taste Prepare the sliced potatoes, and cover them with cold water in a large container, and set aside. In a medium saucepan, melt 3 tablespoons of butter or margarine. Remove from heat and stir in 14 cup flour, stirring until lumps are dissolved. Add 1 teaspoon salt, 2 cups milk, and 2 cups shredded Velveeta cheese. Return mixture to low heat, and cook, stirring constantly, until cheese sauce is thick and bubbly. Remove from heat. Stir in 1 tablespoon fresh chopped parsley. Spray a very large casserole dish (13-inch by 9-inch by 2-inch) with cooking oil spray, and place 13 of the cheese sauce on the bottom of the dish. Spread it out evenly. Now, place 12 of the sliced potatoes in a layer on top of the cheese sauce. Sprinkle 14 cup finely chopped onion over the potatoes, salt and pepper to taste, and pour another third of the cheese sauce over the top. Next, place the other half of the sliced potatoes in a even layer over the top of the casserole. Salt and pepper to taste, and pour the final third of the cheese sauce evenly over the entire casserole. At this point, if your cheese sauce does not come up to the level of the potatoes, add milk, distributing it evenly, until there is liquid all the way to the top of the potatoes. (I used 2 additional cups of milk.) Cover casserole with aluminum foil, and bake at 350 degrees for 30 minutes. Remove the foil, and bake 45 minutes longer. Test the potatoes with a fork, and, if they are soft, remove the casserole from the oven. Place the foil back on top of the casserole, and let it sit on the counter for about 10 minutes to let the potatoes soak up all the liquid. Remove the foil, and your Scalloped Potatoes with Cheese is ready to serve! It will look gorgeous, and it is very tasty! You'll love it!!!

Ingredients: 1 12 pounds lean ground beef 1 12 teaspoons salt 12 cup chopped onion 12 cup ketchup + 34 cup ketchup (for topping) 2 well beaten eggs 4 cups cubed bread (Almost any type or combination of leftover breads will do.) Combine 1 12 pounds ground beef, 1 12 teaspoons salt, 12 cup chopped onion, 12 cup ketchup, 2 well-beaten eggs, and 4 cups of cubed bread. Beat with a mixer until well combined. Form into a loaf, and place in a Pyrex (or other oven-proof) loaf pan that has been lined with aluminum foil. Press the meatloaf to fill out all corners of the loaf pan. Cover with a generous amount of ketchup (approximately 34 cup). Cover the top with the aluminum foil, and place meatloaf in an oven that has been preheated to 350 degrees. Bake for 1 hour and 15 minutes, and then remove the foil from the top. Bake 15 minutes longer, until the meatloaf is bubbly and is set on the top. Remove from the oven, and immediately remove the meatloaf from the aluminum foil, and drain, if needed. Slice (using an electric knife, if possible) into serving slices. Arrange on a platter and serve while hot! A delicious "can't-be-beat" comfort food!!!

It is sweet and salty, crispy and chewy--a delight, with even a luscious side dip! Ingredients; 2 slices white or whole wheat bread 4 tablespoons butter, softened to room temperature 1 ripe banana (not over-ripe) 1 tablespoon mayonnaise 2 tablespoons peanut butter 2 slices crisp, cooked bacon (optional) 14 cup brown sugar Spread one side of each of two slices of bread with butter. This will use about 1 tablespoon butter. Place both slices of bread, butter side down, on a hot grill or skillet, and let it brown on the under side. Place the two slices of bread, browned side up, on a sandwich or cutting board. Spread one slice of the browned bread with 1 tablespoon of mayonnaise. Spread the other slice of browned bread with 2 tablespoons peanut butter. Peel a banana, and cut it in half crosswise. Cut each half into long, even slices of banana. Arrange these slices of banana on top of the spread peanut butter. Break the two slices of bacon in half, and arrange the four halves on top of the sliced banana. Now, cover the peanut butter-banana-bacon side with the other slice of bread, with the mayonnaise against the bacon. Spread softened butter on the upper side of the sandwich, place it butter side down in a skillet, and spread softened butter on the last of the four sides of the bread. Turn on the heat under the skillet, and cook slowly, until all flavors are blended, and the sandwich is brown on both sides. Remove from the skillet, and place it on a cutting board, and cut semi-diagonally into two pieces. Place on a serving dish. Garnish: Mix your leftover softened butter with about 14 cup brown sugar. Mash it with a fork until well-blended. Place the mixture alongside the peanut butter and banana sandwich, and use it for dipping the sandwich. It's wonderful! Thank ya! Thank ya very much!

In this video, Betty demonstrates how to prepare Grilled Boneless Pork Chops. These pork chops are tender and juicy and can be prepared in almost no time! Ingredients: 4 boneless pork chops, about ½-inch thick (You can make as many as your grill will hold!) salt, to taste freshly ground black pepper, to taste extra virgin olive oil (generous amount to cover both sides of pork chops) Heat up your outdoor grill. (You may use an electric kitchen grill, if you prefer.) Salt and pepper pork chops to taste. Drizzle extra virgin olive oil over pork chops. Turn pork chops to coat with olive oil on both sides. Place pork chops on hot grill, and cook until bottom sides are brown. Use tongs to turn all pork chops, and let them continue to bake until brown on both sides. At this point, remove the pork chops and place them on a nice serving platter. Let them rest a bit before cutting into them. To test for doneness, make a cut in the deepest part of one of the pork chops. The meat should be white. If there is any pink showing, the pork chops will need to go back to the grill and cook a bit longer. Pork *must* be cooked all the way through! I served these Grilled Boneless Pork Chops with Wild Rice Bake and Fordhook Lima Beans, with some Potato Chip Cookies for dessert and ice tea to drink! Sooooo good! Learn how to cook pork chops with this easy video recipe. PORK CHOPSGet you some. Bone-in or boneless whatever your preference. Bone-in take a little longer to cook but are harder to overcook so they might be good to start with. If your boneless pork chops are more than an inch thick, I recommend butterflying them to give you a thinner piece of meat that will cook faster and more evenly.DRY RUBThis will make enough to coat 4 regular sized pork chops.* 1 teaspoon each: mustard seed, thyme, black pepper -- grind these together and add:* 1 teaspoon paprika* 1 teaspoon salt.Sprinkle about a half- teaspoon of the mix on each pork chop and rub it in. Then flip them over and sprinkle another half teaspoon on the other side. Rub that in. Turn your stove on high heat to preheat your skillet. Add about a tablespoon of butter and a tablespoon of oil to the pan and let it melt and get all sizzlin'. Put in your pork chops. Arrange them so that the bony side or the thicker side is towards the middle of the pan where it is hottest. Cook them for 2 minutes if they are boneless and thin (if you butterflied them), 3-4 minutes if they are bone-in. Flip them over and turn the heat down to medium-low. Cook them for another 2 minutes for thin ones or 3-4 minutes for the other ones. Turn the heat off. Poke them with your finger. They should feel firm, but not hard. Poke them with a knife.
