In this video, Betty demonstrates how to make her Southern Oven-Baked Pork Chops with Homestyle Gravy recipe. The pork chops are super tasty and the gravy is smooth and velvety--a heart, filling entree! Ingredients: 1.25 pounds of boneless pork chops (about 3 or 4) meat tenderizer, to taste 1 cup flour (for dredging) ground black pepper, to taste 14 cup peanut oil 12 cup flour (leftover from the dredging) 2 cups water 1 vup milk salt, to taste Sprinkle meat tenderizer on top and bottom of all of the boneless pork chops (to taste). Put 1 cup of flour in a zip lock bag for coating the pork chops. Now, put 14 cup peanut oil in an oven-proof skillet and begin heating it. Watch it carefully, and make sure it does not burn or smoke. Now take one pork chop at a time, place them in the flour in the zip lock bag, shake the bag to coat the pork chops with flour, and place the pork chops in the heated peanut oil. Use a fork to turn the pork chops once, when they are beginning to brown, and then place the skillet in an oven that has been preheated to 400 degrees. Bake for 20 to 25 minutes, checking occasionally, and turning when it seems appropriate. When the pork chops are done, remove the skillet from the oven and place it back on the cooktop. Remove the pork chops to a serving dish. (You may want to drain any excess oil on paper toweling.) Before making your gravy, discard all of the grease from the skillet, saving only the crumbs that stick. Now, combine 12 cup of flour (leftover from the zip lock bag), and 2 cups of water in the skillet of crumbs. Stir and scrape the mixture in the skillet before you turn on the heat. Add 1 cup of milk and salt to taste, and then place the skillet over medium heat. After a bit, turn the heat to low. Continue to cook and stir, removing all lumps of flour before it gets too hot. Keep cooking the gravy until it is brown and bubbly, and add more water if it thickens too much. When it is done, pour it into a serving bowl, and serve along with the oven baked pork chops. A super entree!!!

It is sweet and salty, crispy and chewy--a delight, with even a luscious side dip! Ingredients; 2 slices white or whole wheat bread 4 tablespoons butter, softened to room temperature 1 ripe banana (not over-ripe) 1 tablespoon mayonnaise 2 tablespoons peanut butter 2 slices crisp, cooked bacon (optional) 14 cup brown sugar Spread one side of each of two slices of bread with butter. This will use about 1 tablespoon butter. Place both slices of bread, butter side down, on a hot grill or skillet, and let it brown on the under side. Place the two slices of bread, browned side up, on a sandwich or cutting board. Spread one slice of the browned bread with 1 tablespoon of mayonnaise. Spread the other slice of browned bread with 2 tablespoons peanut butter. Peel a banana, and cut it in half crosswise. Cut each half into long, even slices of banana. Arrange these slices of banana on top of the spread peanut butter. Break the two slices of bacon in half, and arrange the four halves on top of the sliced banana. Now, cover the peanut butter-banana-bacon side with the other slice of bread, with the mayonnaise against the bacon. Spread softened butter on the upper side of the sandwich, place it butter side down in a skillet, and spread softened butter on the last of the four sides of the bread. Turn on the heat under the skillet, and cook slowly, until all flavors are blended, and the sandwich is brown on both sides. Remove from the skillet, and place it on a cutting board, and cut semi-diagonally into two pieces. Place on a serving dish. Garnish: Mix your leftover softened butter with about 14 cup brown sugar. Mash it with a fork until well-blended. Place the mixture alongside the peanut butter and banana sandwich, and use it for dipping the sandwich. It's wonderful! Thank ya! Thank ya very much!

In this video, Betty demonstrates how to make her Asian Vegetables with Soy Sauce Gravy recipe. This vegetable dish is attractive and has a very delicate hint of soy sauce flavor. For all soy sauce lovers, feel free to increase the amount of soy sauce in the recipe--and pass the soy sauce at the table! Ingredients: 1 package frozen Asian vegetables (Any type of frozen vegetable or mix of vegetables will work.) 2 tablespoons soy sauce 1 cup water 2 tablespoons butter 2 tablespoons soy sauce (minimum)--You may increase this as desired to satisfy your taste. roasted salted cashews or chow mein noodle for topping (optional) In a medium saucepan, heat 1-inch of water to a full boil. Add the frozen mixed vegetables, and return to a boil. Cook about 3 minutes, until crisp-tender (cooked completely, but retaining their green color and not mushy). While your vegetables are cooking, prepare your soy sauce gravy. In a small saucepan, mix 2 tablespoons cornstarch and 1 cup of water until smooth. Add 2 tablespoons butter and 2 tablespoons (minimum) soy sauce. You may adjust the amount of soy sauce to your taste. Place the soy sauce mixture over medium heat, and bring to a boil. Turn the heat to low, and cook the soy sauce gravy until it is thickened and rich-looking. By now, your vegetables should be done. Drain off the water and place the vegetables in a nice serving dish. You may serve this by pouring the soy sauce gravy over the top and mixing well, or by serving into individual bowls. In either case, you may optionally add a few cashews or chow mein noodle to the top for garnish. This dish can also serve as the base of an entree--just add some pan-fried chicken or beef strips before ladling on the soy sauce gravy--wonderful!!!

Betty has previously posted a creamy macaroni and cheese recipe (made with Velveeta), but this recipe has sharp cheddar cheese and has flavor and crustiness that is to die for!!! Ingredients: 8 oz. elbow macaroni water, salted with 1 tablespoon salt 3 tablespoons butter or margarine 14 cup flour 2 cups milk (I use skim milk.) 2 cups shredded cheddar cheese 12 teaspoon salt Cook the macaroni in a medium to large pot that is half-full of boiling water, salted with 1 tablespoon of salt. Place 8 oz. of macaroni in the boiling water. It will take about 8 minutes for the macaroni to cook to a consistency that is al denti (chewy, but not mushy). It will continue to cook when baked in the casserole. Meanwhile, prepare your cheddar cheese sauce. In a medium-sized sauce pan, melt 3 tablespoons butter or margarine, and add 14 cup flour. Mix the flour thoroughly into the melted butter or margarine. Do not combine the flour and butter over heat at this point. Add 2 cups milk, 2 cups shredded cheddar cheese, and 12 teaspoon salt. Mix thoroughly. Now, place the cheese sauce over low heat, and cook and stir until the mixture is smooth and cooked through. Move the cheese sauce to a "warmer-type" burner until your macaroni is done, and stir it occasionally. When the macaroni is done, pour it through a colander to remove all the water, and return the macaroni to its original pot. Stir in the cheese sauce gently until completely mixed. Spray an 8-inch by 10-inch Pyrex dish with cooking spray, and add the prepared macaroni to the dish. Place the dish of macaroni in an oven that has been preheated to 350 degrees. Bake for 30 minutes, or until done to your liking. This is one of the *most favorite* recipes of my family. Kids love it, too!!!

In this video, Betty demonstrates how to make beautiful and tasty Baked Potato Fans. These are whole baking potatoes that have been peeled and cut into slices (almost to the bottom), then drizzled with butter, sprinkled with salt, topped with a glorious blend of herbs and cheeses and baked in the oven. They make a great accompaniment to almost any meal! Note: I made just 2 of these potatoes for demonstration purposes, but you can increase or decrease the amounts as needed. Ingredients: 2 medium baking potatoes ½ teaspoon salt 1 ½ tablespoons butter or margarine, melted 1 tablespoon of chopped fresh herbs (I used parsley, chives, thyme, and sage. You may use any or all of these. If you used dried herbs, use only 1 teaspoon altogether.) 2 tablespoons finely shredded sharp Cheddar cheese 1 tablespoon finely grated Romano or Parmesan cheese (I use Italian Peccorino Romano cheese.) cooking oil spray Wash and peel potatoes. Keep covered with water until ready to use. When ready to assemble recipe, dry the potatoes with a paper towel. Cut potatoes into thin slices, but not all the way through. Use the handle of a spoon to prevent knife from cutting all the way. Put potatoes in a baking dish that has been sprayed with cooking oil. Fan the potatoes slightly. Sprinkle with salt and drizzle with butter or margarine. Sprinkle with herbs. Bake potatoes at 425 degrees for about 50 minutes. Remove from oven and sprinkle with cheeses. Bake potatoes for another 10 to 15 minutes until lightly browned, cheeses are melted, and potatoes are soft inside. You can check for doneness with a fork. Serve immediately. These are very pretty when served alongside a steak or other entrée. I hope you like these!—Betty 
