In this video, Betty demonstrates how to make her Southern Oven-Baked Pork Chops with Homestyle Gravy recipe. The pork chops are super tasty and the gravy is smooth and velvety--a heart, filling entree! Ingredients: 1.25 pounds of boneless pork chops (about 3 or 4) meat tenderizer, to taste 1 cup flour (for dredging) ground black pepper, to taste 14 cup peanut oil 12 cup flour (leftover from the dredging) 2 cups water 1 vup milk salt, to taste Sprinkle meat tenderizer on top and bottom of all of the boneless pork chops (to taste). Put 1 cup of flour in a zip lock bag for coating the pork chops. Now, put 14 cup peanut oil in an oven-proof skillet and begin heating it. Watch it carefully, and make sure it does not burn or smoke. Now take one pork chop at a time, place them in the flour in the zip lock bag, shake the bag to coat the pork chops with flour, and place the pork chops in the heated peanut oil. Use a fork to turn the pork chops once, when they are beginning to brown, and then place the skillet in an oven that has been preheated to 400 degrees. Bake for 20 to 25 minutes, checking occasionally, and turning when it seems appropriate. When the pork chops are done, remove the skillet from the oven and place it back on the cooktop. Remove the pork chops to a serving dish. (You may want to drain any excess oil on paper toweling.) Before making your gravy, discard all of the grease from the skillet, saving only the crumbs that stick. Now, combine 12 cup of flour (leftover from the zip lock bag), and 2 cups of water in the skillet of crumbs. Stir and scrape the mixture in the skillet before you turn on the heat. Add 1 cup of milk and salt to taste, and then place the skillet over medium heat. After a bit, turn the heat to low. Continue to cook and stir, removing all lumps of flour before it gets too hot. Keep cooking the gravy until it is brown and bubbly, and add more water if it thickens too much. When it is done, pour it into a serving bowl, and serve along with the oven baked pork chops. A super entree!!!

In this video, Betty demonstrates how to make her version of Elvis Presley's famous Grilled Peanut Butter and Banana recipe. It is sweet and salty, crispy and chewy--a delight, with even a luscious side dip! Ingredients; 2 slices white or whole wheat bread 4 tablespoons butter, softened to room temperature 1 ripe banana (not over-ripe) 1 tablespoon mayonnaise 2 tablespoons peanut butter 2 slices crisp, cooked bacon (optional) 14 cup brown sugar Spread one side of each of two slices of bread with butter. This will use about 1 tablespoon butter. Place both slices of bread, butter side down, on a hot grill or skillet, and let it brown on the under side. Place the two slices of bread, browned side up, on a sandwich or cutting board. Spread one slice of the browned bread with 1 tablespoon of mayonnaise. Spread the other slice of browned bread with 2 tablespoons peanut butter. Peel a banana, and cut it in half crosswise. Cut each half into long, even slices of banana. Arrange these slices of banana on top of the spread peanut butter. Break the two slices of bacon in half, and arrange the four halves on top of the sliced banana. Now, cover the peanut butter-banana-bacon side with the other slice of bread, with the mayonnaise against the bacon. Spread softened butter on the upper side of the sandwich, place it butter side down in a skillet, and spread softened butter on the last of the four sides of the bread. Turn on the heat under the skillet, and cook slowly, until all flavors are blended, and the sandwich is brown on both sides. Remove from the skillet, and place it on a cutting board, and cut semi-diagonally into two pieces. Place on a serving dish. Garnish: Mix your leftover softened butter with about 14 cup brown sugar. Mash it with a fork until well-blended. Place the mixture alongside the peanut butter and banana sandwich, and use it for dipping the sandwich. It's wonderful! Thank ya! Thank ya very much!

Betty s Sage Flavored Stuffed Pork Chops Recipe

In this video, Betty demonstrates how to make a hearty dinner of Sage Flavored Stuffed Pork Chops. These are made with an instant stuffing mix, but, if you have leftover stuffing from your holiday meal, you can use that, instead. Ingredients: ½ stick butter or margarine, melted 1 ½ cups chicken broth + 2 additional cups chicken broth 6 oz. package instant stuffing (I used Kraft Stove Top Stuffing Mix—Pork flavor.) 1 teaspoon rubbed sage 2 thick-cut boneless pork chops--about 1-inch thick (You may make as many pork chops as your amount of stuffing and size of casserole dish will allow.) salt (or use meat tenderized with no MSG) to taste cooking oil spray In a medium saucepan, mix together ½ stick butter and 1 ½ cups chicken broth. Place over medium heat, and bring to a boil. Remove from heat. Add 1 teaspoon rubbed sage to a 6 oz. package of Stove Top Stuffing Mix. Add the stuffing mix to the hot broth. Place a lid that fits the saucepan on top of the stuffing and broth mixture, and let it sit for 5 minutes. While the stuffing is resting, you can prepare your pork chops. Take a sharp knife, and make a slice most of the way through each pork chop from the outside edge, making an open pocket in each pork chop. Salt to taste. When the stuffing has rested in the covered saucepan for 5 minutes, pack as much of the stuffing into the pork chop pockets as possible. Use a wooden toothpick to pin the opening back together, using your fingers to stuff back in any of the stuffing that spills out. Place the two pork chops in a casserole dish that has been sprayed with cooking oil spray. Bake in a 350-degree oven for 35 minutes. Bring the casserole out of the oven temporarily. Mix 2 cups of chicken broth with the remaining sage-flavored stuffing, and place the rest of the stuffing into the casserole dish around the pork chops. Return the casserole to the oven and bake 15 minutes longer. Remove and serve by placing each pork chop on a plate and surrounding it with sage-flavored stuffing. You will probably want to add some colorful cooked vegetables. I served mine with a pumpkin muffin and hot apple cider. The taste was wonderful!

This is a perfect accompaniment to her dinner of Herbed Chicken Crunch, Sauteed Zucchini and Yellow Squash, fresh green beans from the Farmer's Market, and a large croissant! Ingredients: 6 medium potatoes, peeled and sliced 14" thick (I used Russet, but any variety is fine.) 3 tablespoons butter or margarine 14 cup flour 1 teaspoon salt 2 cups milk (for sauce) 2 cups shredded Velveeta cheese (You may substitute any variety of shredded cheese that you like.) 1 tablespoon fresh chopped parsley (or 1 teaspoon dried chopped parsley) 14 cup finely chopped onion 2 cups additional milk (for pouring over casserole to come to the top of the potatoes) cooking oil spray salt and black pepper, to taste Prepare the sliced potatoes, and cover them with cold water in a large container, and set aside. In a medium saucepan, melt 3 tablespoons of butter or margarine. Remove from heat and stir in 14 cup flour, stirring until lumps are dissolved. Add 1 teaspoon salt, 2 cups milk, and 2 cups shredded Velveeta cheese. Return mixture to low heat, and cook, stirring constantly, until cheese sauce is thick and bubbly. Remove from heat. Stir in 1 tablespoon fresh chopped parsley. Spray a very large casserole dish (13-inch by 9-inch by 2-inch) with cooking oil spray, and place 13 of the cheese sauce on the bottom of the dish. Spread it out evenly. Now, place 12 of the sliced potatoes in a layer on top of the cheese sauce. Sprinkle 14 cup finely chopped onion over the potatoes, salt and pepper to taste, and pour another third of the cheese sauce over the top. Next, place the other half of the sliced potatoes in a even layer over the top of the casserole. Salt and pepper to taste, and pour the final third of the cheese sauce evenly over the entire casserole. At this point, if your cheese sauce does not come up to the level of the potatoes, add milk, distributing it evenly, until there is liquid all the way to the top of the potatoes. (I used 2 additional cups of milk.) Cover casserole with aluminum foil, and bake at 350 degrees for 30 minutes. Remove the foil, and bake 45 minutes longer. Test the potatoes with a fork, and, if they are soft, remove the casserole from the oven. Place the foil back on top of the casserole, and let it sit on the counter for about 10 minutes to let the potatoes soak up all the liquid. Remove the foil, and your Scalloped Potatoes with Cheese is ready to serve! It will look gorgeous, and it is very tasty! You'll love it!!!

For all soy sauce lovers, feel free to increase the amount of soy sauce in the recipe--and pass the soy sauce at the table! Ingredients: 1 package frozen Asian vegetables (Any type of frozen vegetable or mix of vegetables will work.) 2 tablespoons soy sauce 1 cup water 2 tablespoons butter 2 tablespoons soy sauce (minimum)--You may increase this as desired to satisfy your taste. roasted salted cashews or chow mein noodle for topping (optional) In a medium saucepan, heat 1-inch of water to a full boil. Add the frozen mixed vegetables, and return to a boil. Cook about 3 minutes, until crisp-tender (cooked completely, but retaining their green color and not mushy). While your vegetables are cooking, prepare your soy sauce gravy. In a small saucepan, mix 2 tablespoons cornstarch and 1 cup of water until smooth. Add 2 tablespoons butter and 2 tablespoons (minimum) soy sauce. You may adjust the amount of soy sauce to your taste. Place the soy sauce mixture over medium heat, and bring to a boil. Turn the heat to low, and cook the soy sauce gravy until it is thickened and rich-looking. By now, your vegetables should be done. Drain off the water and place the vegetables in a nice serving dish. You may serve this by pouring the soy sauce gravy over the top and mixing well, or by serving into individual bowls. In either case, you may optionally add a few cashews or chow mein noodle to the top for garnish. This dish can also serve as the base of an entree--just add some pan-fried chicken or beef strips before ladling on the soy sauce gravy--wonderful!!!

This video will teach you how to perfectly cook a pork chop seasoned with my secret pork chop spice blend.Pork chops are super fast and easy to make and when done well, they rival any t-bone steak around. PORK CHOPSGet you some. Bone-in or boneless whatever your preference. Bone-in take a little longer to cook but are harder to overcook so they might be good to start with. If your boneless pork chops are more than an inch thick, I recommend butterflying them to give you a thinner piece of meat that will cook faster and more evenly.DRY RUBThis will make enough to coat 4 regular sized pork chops.* 1 teaspoon each: mustard seed, thyme, black pepper -- grind these together and add:* 1 teaspoon paprika* 1 teaspoon salt.Sprinkle about a half- teaspoon of the mix on each pork chop and rub it in. Then flip them over and sprinkle another half teaspoon on the other side. Rub that in. Turn your stove on high heat to preheat your skillet. Add about a tablespoon of butter and a tablespoon of oil to the pan and let it melt and get all sizzlin'. Put in your pork chops. Arrange them so that the bony side or the thicker side is towards the middle of the pan where it is hottest. Cook them for 2 minutes if they are boneless and thin (if you butterflied them), 3-4 minutes if they are bone-in. Flip them over and turn the heat down to medium-low. Cook them for another 2 minutes for thin ones or 3-4 minutes for the other ones. Turn the heat off. Poke them with your finger. They should feel firm, but not hard. Poke them with a knife.
