Vah Mango pickle is a spicy and tangy condiment that is made in almost every Indian household and has their own unique taste. Generally made during the summer season with lots of spices and mango (green or raw mango) pieces. During the Mango season all are busy making the Mango pickle is different styles from different states. Hello Everyone, Summer is the season for mangoes and so is for pickle in India. In India, people make mango pickle in big batch and store it for whole year. But when I make pickle I make it in small batches (1-2 ) mangoes at a time because raw mangoes are available all year round where I live. Here is simple and quick recipe for mango pickle (plain and sweet) 2 different ones with easiest recipe possible. Achar masala is available in almost all Indian grocery stores and it makes it so simple to make this pickle. I use olive oil so that I can enjoy it without worrying about calories. Avakai or avakaya Mango Pickle Making Made Easier

Mango pickles come in a wide variety. One very popular variety is the avakaya pickle, which is very popular in the State of Andhra Pradesh and is exported in large quantities all over..This is how you make it: mango peices are cut with the kernel and the skin intact as shown in the clip.. wash them thoroughly in salt water and air dry them ( indoors, under a fan ). boil about half a kg of ground nut oil or sesme seed oil and turn off the flame heat and add about 100 to 200 gms of yellow mustard seeds ( fenugreek ) and allow it to cool down to room temerature. mix the masala into a paste in the following ratio: for every 6 kgs of mango peices.. 1 kg or red chilli powder ( pickle variety, guntur ), 1 kg of black mustard seed powder, 1.5 kgs of non iodised salt, and 1.5 kgs of groundnut oil ( other than the one already boiled with fenugreek seeds ) . into this paste of masala, add handfuls of mango peices in a smaller container, and mix thoroughly so that the masala coats the peices; stack these coated peices of mango in a suitable non corrosive ( such as glass, glazed earthenware or food grade polycarbonate containers ) when fully stacked, add about 2 liters of clean water and the cooled oil, close the lid tight and leave to pickle; pickleing wil take about 10 days, but you have to take out the pickes into another container and thoroughly mix them every three days.. when fully pickled, the pickle will have layer of oil floating on top and the mango peices will have shrunk a bit . at this stage your pickle is ready, you can have it along with chapaties, curd rice and best of all mixed in rice so EAT ! NOTE: utmost cleanliness should be maintained in the entire process, else the pickles will get spoilt the pickles will last one year without refrigeration if kept clean and carefully. Note: every time you take a quantity out from the main container, you need to mix it from the bottom, since the salt tends to settle down at the bottom over a period of time .

How to make Tomato Pickle in Telugu Vantalu.Ingredients : Tomatoes : 1 KG Salt : To Taste Tamarind : Small Ball (lemon sized) Mustured Seeds Powder : 12 Table Spoon Fenugreek Seeds Powder : 14 Table Spoon Red Chilli Powder : 5 - 7 Table Spoons Oil : 14 KgIngredients for Tadka :Mustured Seeds : 12 Table Spoon Fenugreek Seeds : 12 Table Spoon Curry leaves : 15 (fresh) Dry red chillis : 4 -5 Cloves garlic, slightly crushed : 15 Oil : 2 tb spnsPreparation Method :Step 1 : Heat oil in a heavy bottomed vessel, add the sliced tomatoes and cook on high heat for 5 mts. Reduce heat to medium high and continue to cook till the oil separates and the tomatoes turn mushy.Step 2 : Towards the end of the cooking process as the oil seperates, reduce heat and keep stirring till the oil separates completely (the tomatoes could take a good 45 mts to an hour to cook). Step 3 : Turn off heat, add the tamarind and place lid. The tamarind will soften with the heat of the cooked tomatoes. Cool completely.Step 4 : Once cool, add salt and grind the cooked tomatoes along with tamarind to a paste. Remove onto a vessel. Add chilli pwd and methi pwd. Combine.Step 5 : In a pan, add 2 tbsps oil, add mustards seeds, methi seeds and fry till the mustard splutters and the methi turns red. Add the dry red chillis, curry leaves and saute for a few seconds and turn off heat. Step 6 : Add the crushed garlic and leave aside the tempering for 4-5 mts.Step 7 : Once cool, add this tempering along with oil to the tomato paste. Combine well. Cool and store in an airtight bottle.
