 http:www.youtube.complaylist?list=...| RANCH LETTUCE CUPS |INGREDIENTS (Dressing):1 Cup plain yogurt ¼ Cup buttermilk or mayonnaise 3 Tablespoons finely chopped italian flat parsley 2 Tablespoons finely chopped fresh chives 1 Chopped shallot 1 Teaspoon of fresh dill Juice of 1 lemon 1 Teaspoon white vinegar ½ Teaspoon kosher salt 18 Teaspoon pepper INGREDIENTS (Salad):1 Head butter or iceberg lettuce 1 Carrot 1 Jicama or celery stalk 1 Red pepper 1 Avocado 2 Tablespoons cilantro (for garnish)INSTRUCTIONS:For the dressing, add all ingredients into a mason jar.Then tighten lid and shake vigorously until ingredients are incorporated and mixture is creamy smooth.For the salad, peel and shred 1 carrot, slice jicama or celery into thin stalks, julienne one red pepper, and slice 1 avocado. Next, wash and separate lettuce leaves from core. Each leaf forms a cup. Add ¼ of each ingredient into lettuce cup. Take one of the oranges and hold over a mason jar while running a knife in between citrus sections until flesh falls away and pith is left in your hand. Then squeeze pith until all juice falls into a mason jar.With the remaining orange, slice into pinwheels. Then, set aside. Form a well in the flour mixture, pour the eggs into the center. Slowly start to incorporate the flour into the egg. Mix well until you have formed dough. Take the dough and roll into long rolls, width should be no thicker than your ring finger. Cut the rolls into half in pieces and roll into ""marble size"" balls.Heat the oil in a saucepan, place balls into oil in batches and allow cooking till they float to the top, approx 3 minutes. Once cooked, place on paper towels, allowing them to cool.Add honey and lemon juice to the stockpot and allow them to warm up and become thinner. Once thinned, add the almonds to the pot. In a separate bowl; add the fried dough and coat the honey mixture evenly to it.  http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31INGREDIENTS (Stock):8-10 Cups of chicken stock, vegetable stock, or water. 2 to 4 Celery stocks (depending on size) 2 to 4 Carrots (depending on size) 1 Large white onionINGREDIENTS (soups):6 to 8 carrots (Depending on Size) 1 Bunch of asparagus 2 Teaspoons olive oil ¼ Teaspoon kosher salt 18 Teaspoon of pepper 1 Teaspoon of plain yogurt 18 teaspoon freshly grated ginger 1.5 lbs. Boneless skinless cooked chicken breast Juice of ½ lime 1 Handful minced cilantro 1 Baby bok choy 1 Red jalapeno (optional)INSTRUCTIONS:In a large pot, add sautéed chopped carrots, onion, and celery to stock. Bring to a boil, and then set aside to cool. Preheat oven to 400 degrees.Chop 6 to 8 peeled carrots and place them on one side of a roasting tray. Then add 1 bunch of asparagus on the other side of roasting tray. Drizzle olive oil and sprinkle salt and pepper onto carrots and asparagus. Roast the veggies in oven at 400 degrees for 12-14 minutes.For the carrot soup, put the roasted carrots and 2 13 to 3 13 cups of the boiled and cooled stock into a blender. Blend until smooth and creamy. Drizzle with olive oil and garnish with grated ginger for flavor.For the asparagus soup, repeat process by adding roasted asparagus and 2 13 to 3 13 cups of the boiled and cooled stock into a blender. Blend until smooth and creamy. Garnish with one cut asparagus spear and plain yogurt.For the chicken cilantro soup, shred 1.5 lbs. of cooked chicken breast by using a fork.  http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31INGREDIENTS:2 Tablespoons olive oil ½ Cup of mushrooms quartered (baby bella, cremini, porcini, button, or whatever you have) ¼ Teaspoon kosher salt 18 Teaspoon pepper (optional) 4 Slices of bread (brioche, white, wheat, sourdough or whatever you have) 4 Eggs 1 Teaspoon cheese: fontina, mozzarella or whatever you like (optional) 1 Cup of fresh spinach Juice of ½ a lemonINSTRUCTIONS:Wash and cut mushrooms into quarters. Then add olive oil into sauté pan over medium heat. Add and sauté mushrooms until golden brown and soft. Add salt and pepper. Then set pan aside.Using a glass, cut out a circle in the center of each bread slice of choice. Drizzle olive oil in a separate sauté pan. Then place over medium heat. Put bread slices and cut out circles in pan and toast on each side until lightly brown. Remove each toasted circle and set aside. In the toasted bread remaining in the sauté pan, crack an egg in the center of the hole in the bread. Cook for about 1-2 minutes then place pan under broiler. If adding cheese let it melt while under the broiler. Cook until whites have set to your liking or for about 1-2 minutes.For the kids, place eggs in a nest on plate and put toasted circle slightly askew over the egg.For the parents plate your eggs the same way but add mushrooms and fresh spinach around the nest. Dark chocolate or bittersweet chocolate (dairy free) 1 Teaspoon vanilla extract 2 Teaspoons of honey 4 Raspberries (1 for each serving)INSTRUCTIONS:Chocolate bowls: over medium heat, set up a double boiler (a pot of boiling water on the bottom, and a heat-resistant bowl with chocolate on top). Place chocolate in top bowl, mix and allow chocolate to melt. Then remove from heat, and let cool.Next, blow up 4 small balloons, and dip them into the melted chocolate about 13 of the way up. Then set the balloons down on a baking sheet. Once chocolate has hardened, pop the balloons with a pin and remove the chocolate serving bowl that has formed. To make the pudding, place pitted and skinned avocado in food processor along with: remaining melted chocolate, coconut milk, vanilla extract, and honey. Pulse until creamy.Place pudding mixture into a piping bag (or use a resealable bag and cut the corner), squeeze the pudding through and into the chocolate bowls. Generously sprinkle salt over the entire rack of ribs on both sides, approx 1 teaspoon. Place ribs on 2 pieces of aluminum foil (for strength) add paste to ribs, both sides. Wrap ribs in foil and seal tightly. Play ribs in foil pack on a baking sheet. Place in 350-degree oven for 2 hrs.While that cooks, lets make BBQ sauce! Add ½ cup of balsamic vinegar to a saucepan and 2 tablespoons of tomato sauce or ketchup. Let mixture reduce done till it becomes thick and begins to get a dark rich color, almost black.Take ribs out of the oven, remove from foil and add BBQ sauce. Place ribs back on baking tray and add to the oven on broil setting. Of steak cut into 4 portions (can be skirt steak, flank steak, or sirloin) 2 zucchinis (yellow and green) 1 head romaine lettuce (quartered) 2 teaspoons olive oil Salt & pepper to tasteINGREDIENTS (SALSA VERDE):1 cup fresh parsley 1 cup fresh basil 1 garlic clove 14 cup capers 2 oil packed anchovies (optional) 14 cup olive oil Juice of 12 lemonINSTRUCTIONS:Slice 2 zucchinis on the bias and quarter some romaine lettuce. Drizzle olive oil and sprinkle salt and pepper onto vegetables and steak. Grill steak portions for about 3 to 5 minutes on each side, depending on how you like it (medium rare or well done). Place zucchini slices on grill and cook for about 2 to 3 minutes on each side. Add romaine lettuce to the grill last. Cook until grill marks are visible.For the salsa verde, add the following ingredients to a food processor: parsley, basil, garlic, capers, anchovies, olive oil, and lemon juice. Make it in bulk, freeze the left over's and pull it out for those busy nights when you don't have time to cook.Start by dicing your carrots, stalks of celery and onion. Mince your garlic. Drizzle olive oil to coat the bottom of the pot and cook over medium heat until warm. Add ingredients and allow them to sweat. The vegetables will literally begin to look like theyre sweating, releasing their juices... the longer you cook them without allowing them to turn brown the better the flavor. Add salt and a pinch of chili flakes.In a separate stock pot, boil water. Cut little "x's" into the tops of the 8 tomatoes (bottom side, not where the stem is). Place them directly into the boiling water for approx 2 minutes. When they're done, take them out of the pot and plunge them into a bowl (of ice and water) big enough to hold them all. Allow them to cool.Once the tomatoes are cooled, remove them from the water. You'll notice that the skins are separating from the flesh. Remove all the skin and coarsely chop the tomatoes. Add tomatoes to the pot with celery, carrots, onion and garlic. Add in water & wine, and stir. Allow to cook over medium low heat until the water reduces down and the flavors start to meld together, about 45 minutes -- 1 hour. Add torn basil leaves and stir.Congrats folks, you just make a simple homemade tomato sauce from scratch. You can add THAT to your bag of tricks! (see recipe below)Slice squash in half (lengthwise) and pull out seeds. (Don't throw them out, you can roast these at a later time, just add 1 teaspoon olive oil, salt and roast until golden brown.)Rub olive oil and salt to taste all over the flesh side of the squash you have cut in half. Place flat side down on a roasting tray and place in a 450 oven for 20 minutes until the flesh of the squash is fork tender. Take out of the oven and allow to cool.MEATBALLSWhile that's happening... Time to make our meatballs...1.5 lbs lean ground turkey (you can use, beef, pork or veal...whatever you have, it's the same recipe) 1 egg beaten ¾ cup of Italian flavored bread crumbs ¼ cup of minced fresh parsley approx ¼ cup of grated parmesan cheese salt to taste (approx ¼ teaspoon)Use a bowl big enough to hold and mix all ingredients.Add ground turkey to the bowl first, followed by the egg, and then the rest of the ingredients. Use your hands to mix everything together really well.Grab a dollop of the meat mixture (approximately 1.5 oz or 3 tbsp.) and roll between your palms until a uniformly round meatball is created. Repeat this until all the meat is made into meatballs. Place all the meatballs one by one into the tomato sauce you have cooking on the stove. Give a gentle stir occasionally so the meatballs don't stick to the bottom of the stock pot. In 20 minutes, your meatballs will be cooked through.Take your cooked spaghetti squash and scrape out the flesh with a fork, you will see that the spaghetti squash is stringy, forming ""spaghetti noodles"" as you scrape. Discard the hard outer shell.In a bowl serve,1 heaping serving of spaghetti squash followed by a dollop of tomato sauce and 2 meatballs. Add parmesan cheese to taste.
