 http:www.youtube.complaylist?list=...| RANCH LETTUCE CUPS |INGREDIENTS (Dressing):1 Cup plain yogurt ¼ Cup buttermilk or mayonnaise 3 Tablespoons finely chopped italian flat parsley 2 Tablespoons finely chopped fresh chives 1 Chopped shallot 1 Teaspoon of fresh dill Juice of 1 lemon 1 Teaspoon white vinegar ½ Teaspoon kosher salt 18 Teaspoon pepper INGREDIENTS (Salad):1 Head butter or iceberg lettuce 1 Carrot 1 Jicama or celery stalk 1 Red pepper 1 Avocado 2 Tablespoons cilantro (for garnish)INSTRUCTIONS:For the dressing, add all ingredients into a mason jar.Then tighten lid and shake vigorously until ingredients are incorporated and mixture is creamy smooth.For the salad, peel and shred 1 carrot, slice jicama or celery into thin stalks, julienne one red pepper, and slice 1 avocado. Next, wash and separate lettuce leaves from core. Each leaf forms a cup. Add ¼ of each ingredient into lettuce cup. Drizzle ranch dressing to taste, wrap lettuce cup in hand, and enjoy!| CILANTRO LETTUCE CUPS |INGREDIENTS (Dressing):1 Bunch of finely minced cilantro ½ Stalk of minced scallion (use green and white midsection of the stalk) 1 Tablespoon of soy sauce ½ Cup olive oil ¼ Cup white vinegar Salt and pepper to taste INGREDIENTS (Salad):¼ Head of red cabbageINSTRUCTIONS:For the dressing, add all ingredients into a mason jar.Then tighten lid and shake vigorously until all ingredients are incorporated and mixture is emulsifiedFor the salad, finely shred the leaves of ¼ of a head of red cabbage.Place shredded cabbage in a bowl, drizzle dressing to taste, mix and serve| CITRUS WITH FENNEL, ONION, AND KALAMATA |INGREDIENTS (Dressing):2 Navel oranges ½ Teaspoon honey ¼ Cup olive oil 1 Tablespoon of white vinegar ¼ Teaspoon kosher salt 18 Teaspoon pepperINGREDIENTS (Salad):1 Whole fennel bulb 14 of a red onion ¼ Cup kalamata or cured olives (optional)INSTRUCTIONS:Cut outer skin of both naval oranges with a knife until all skin is removed and flesh is exposed. Take one of the oranges and hold over a mason jar while running a knife in between citrus sections until flesh falls away and pith is left in your hand. Then squeeze pith until all juice falls into a mason jar.With the remaining orange, slice into pinwheels. Then, set aside. Add additional ingredients into mason jar: honey, olive oil, white vinegar, kosher salt, and pepper.Then tighten lid and shake vigorously until all ingredients are incorporated and mixture is emulsifiedFor the salad, thinly slice 1 whole fennel bulb and shave approximately 14 of a red onion. Take the dough and roll into long rolls, width should be no thicker than your ring finger. Cut the rolls into half in pieces and roll into ""marble size"" balls.Heat the oil in a saucepan, place balls into oil in batches and allow cooking till they float to the top, approx 3 minutes. Once cooked, place on paper towels, allowing them to cool.Add honey and lemon juice to the stockpot and allow them to warm up and become thinner. Once thinned, add the almonds to the pot.  http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31INGREDIENTS (Stock):8-10 Cups of chicken stock, vegetable stock, or water. 2 to 4 Celery stocks (depending on size) 2 to 4 Carrots (depending on size) 1 Large white onionINGREDIENTS (soups):6 to 8 carrots (Depending on Size) 1 Bunch of asparagus 2 Teaspoons olive oil ¼ Teaspoon kosher salt 18 Teaspoon of pepper 1 Teaspoon of plain yogurt 18 teaspoon freshly grated ginger 1.5 lbs. Boneless skinless cooked chicken breast Juice of ½ lime 1 Handful minced cilantro 1 Baby bok choy 1 Red jalapeno (optional)INSTRUCTIONS:In a large pot, add sautéed chopped carrots, onion, and celery to stock. Bring to a boil, and then set aside to cool. Preheat oven to 400 degrees.Chop 6 to 8 peeled carrots and place them on one side of a roasting tray. Then add 1 bunch of asparagus on the other side of roasting tray. Drizzle olive oil and sprinkle salt and pepper onto carrots and asparagus. Roast the veggies in oven at 400 degrees for 12-14 minutes.For the carrot soup, put the roasted carrots and 2 13 to 3 13 cups of the boiled and cooled stock into a blender. Blend until smooth and creamy. Peel and cube your sweet potatoes. Place in roasting tray. Add olive oil and salt. Bake for 30-45 minutes, until they're nicely browned.Meanwhile, slice up the red onions and place in a cast iron skillet over low flame. Patience is key to caramelizing these onions. They take a long time, but are well worth it. They will get sweet and caramel in color as they soften, like they are almost melting. This will take approximately 30 minutes. Once the sweet potatoes are done, add them to the skillet with the onions and mix together. Then form 3 little wells with the mixture in the pan. Crack an egg into the wells and add salt. Place skillet in a 450 oven for about 20 minutes or until eggs are cooked through to your liking. Your hash should be a glorious bright orange color. Of steak cut into 4 portions (can be skirt steak, flank steak, or sirloin) 2 zucchinis (yellow and green) 1 head romaine lettuce (quartered) 2 teaspoons olive oil Salt & pepper to tasteINGREDIENTS (SALSA VERDE):1 cup fresh parsley 1 cup fresh basil 1 garlic clove 14 cup capers 2 oil packed anchovies (optional) 14 cup olive oil Juice of 12 lemonINSTRUCTIONS:Slice 2 zucchinis on the bias and quarter some romaine lettuce. Drizzle olive oil and sprinkle salt and pepper onto vegetables and steak. Grill steak portions for about 3 to 5 minutes on each side, depending on how you like it (medium rare or well done). Place zucchini slices on grill and cook for about 2 to 3 minutes on each side. Add romaine lettuce to the grill last. Cook until grill marks are visible.For the salsa verde, add the following ingredients to a food processor: parsley, basil, garlic, capers, anchovies, olive oil, and lemon juice. Generously sprinkle salt over the entire rack of ribs on both sides, approx 1 teaspoon. Place ribs on 2 pieces of aluminum foil (for strength) add paste to ribs, both sides. Wrap ribs in foil and seal tightly. Play ribs in foil pack on a baking sheet. Place in 350-degree oven for 2 hrs.While that cooks, lets make BBQ sauce! Add ½ cup of balsamic vinegar to a saucepan and 2 tablespoons of tomato sauce or ketchup. Let mixture reduce done till it becomes thick and begins to get a dark rich color, almost black.Take ribs out of the oven, remove from foil and add BBQ sauce. Place ribs back on baking tray and add to the oven on broil setting. Once everything is incorporated, dust your work surface & hands with flour. Scoop out a big spoonful and add flour to surface as well. Roll the mixture on the work surface to form a long snake; the thickness should match your pointer finger. Do this to the entire mixture. Take the side of a fork and cut the snake into ½ inch pieces. Frittata Cupcakes for the kids to take to lunch & Frittata in a Skillet for dinner.Follow Babble Video on Twitter: https:twitter.comBabbleVideoMore That's Fresh http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31BACK-TO-SCHOOL FRITTATA IN A SKILLETIngredients: 5 eggs ¼ lb sliced Ham, diced into ½ inch cubes ½ cup of grated or shredded low or reduced-fat cheese of your choice 1 cup of frozen or fresh peas ½ teaspoon olive oil (12 teaspoon more to grease the muffin tins)Beat eggs in a bowl. Season with salt and pepperSauté the peas in olive oil on medium heat for about 5 minutes, until they cook through. Add the diced ham and cook for 2-3 minutes.Add the eggs to the cooked ham and sprinkle with cheese. Cook over medium heat for about 5-7 minutes, until bubbles start to form on top. Then place the sauté pan in a 350 oven for 5 minutes, until the eggs look firm and have set. Let cool and slide onto a platter. Slice and serve!TO MAKE FRITTATA CUPCAKES...Follow the same ingredient list and directions, but instead of dicing your ham into cubes, line the bottom of a greased muffin tin (use a ½ teaspoon olive oil on a paper towel and coat the muffin tins,) with a whole piece of sliced ham so that it forms a cup. Cut off any extra ham and add to egg mixture. Pour the mixture of peas, eggs and cheese into the ham cupsPlace the cupcake pan into the oven and bake at 350 for about 15 minutes until the cupcakes look firm and have set. Let cool and they will pop out of the tins. It's a great back to school frittata. Begin by chopping off the bottoms of the asparagus (they tend to be too fibrous and chewy) and discard. Chop off the pointy tops and place those on a roasting pan. All they need is some olive oil and salt to taste. Place into a 450 oven and roast them for 12 -- 15 minutes.While they cook, grab your vegetable peeler and the remaining asparagus. Beginning at one end, peel back ribbons of asparagus. Allow your vegetable peeler to run alongside the length of the body, until ribbons start to form. Repeat this for all the asparagus. Place these in a bowl and drizzle the olive oil to coat. Squeeze the juice of a ¼ lemon over them. When the spear heads are roasted, toss them in with the ribbons and the vinaigrette. Try my avocado pudding and a cool chocolate bowl made out of balloons! (Everyone wants a treat, but some kids are sensitive to dairy, so this one's just for YOU!)Ingredients: 1 large ripe avocado 14 cup coconut milk 8 oz. bittersweet chocolatedark chocolate (dairy free) 1 teaspoon vanilla extract 2 teaspoons of honey 4 raspberries (1 for each serving, as a delicious garnish)Over medium heat, set up a double boiler (1 pot of boiling water on the bottom and place a bowl with the chocolate on top.) Mix and allow it to melt.Next, blow up four small balloons and dip them into the melted chocolate. You want to cover about 13 of the balloon, from the bottom. Allow the chocolate balloons to set on baking sheet. Once hardened, pop the balloons with a pin and remove the chocolate that has formed, and now you have a little serving bowl. Add the remaining chocolate to the food processor with a pitted and skinned avocado, coconut milk, vanilla extract and honey. Pulse until creamy.Place pudding mixture into a piping bag (or use a storage bag, cutting off the corner to allow you to squeeze the chocolate through). Serve your pudding inside!
