Next, wash and separate lettuce leaves from core. Each leaf forms a cup. Add ¼ of each ingredient into lettuce cup. Take one of the oranges and hold over a mason jar while running a knife in between citrus sections until flesh falls away and pith is left in your hand. Then squeeze pith until all juice falls into a mason jar.With the remaining orange, slice into pinwheels. Then, set aside. Form a well in the flour mixture, pour the eggs into the center. Slowly start to incorporate the flour into the egg. Mix well until you have formed dough. Take the dough and roll into long rolls, width should be no thicker than your ring finger. Cut the rolls into half in pieces and roll into ""marble size"" balls.Heat the oil in a saucepan, place balls into oil in batches and allow cooking till they float to the top, approx 3 minutes. Once cooked, place on paper towels, allowing them to cool.Add honey and lemon juice to the stockpot and allow them to warm up and become thinner. Once thinned, add the almonds to the pot. Boneless skinless cooked chicken breast Juice of ½ lime 1 Handful minced cilantro 1 Baby bok choy 1 Red jalapeno (optional)INSTRUCTIONS:In a large pot, add sautéed chopped carrots, onion, and celery to stock. Bring to a boil, and then set aside to cool. Preheat oven to 400 degrees.Chop 6 to 8 peeled carrots and place them on one side of a roasting tray. Then add 1 bunch of asparagus on the other side of roasting tray. Drizzle olive oil and sprinkle salt and pepper onto carrots and asparagus. Roast the veggies in oven at 400 degrees for 12-14 minutes.For the carrot soup, put the roasted carrots and 2 13 to 3 13 cups of the boiled and cooled stock into a blender. Blend until smooth and creamy. Enjoy! SAVORY Ingredients: 5 cups of cubed ½" bread (Challah or Italian with crusts on) 5 eggs 2 cups of milk 2 pears diced finely into 14" cubes ½ cup dried cranberries ½ cup of gorgonzola or blue cheese crumbled (if you buy it whole just run your fork through it like a rake and make crumbles) ¼ teaspoon of salt ½ teaspoon olive oil (to grease the muffin tins)Tools: Cutting board, knife, large tablespoon or ice cream scooper, bowl, muffin tins (for savory bread pudding) baking dish (for sweet bread pudding)Preheat your oven to 375° On a cutting board, cut the bread into cubes. In a large bowl, beat eggs and add milk, mix well. Add bread to eggmilk mixture and let the bread soak up all the liquid. While that's happening, cut up and dice your pears, nice and small into ¼"" cubes. Add pears to bowl with the bread. Add the rest of your ingredients (cheese, cranberries, and salt) to the bowl and mix well until everything looks nicely melded together. Dip a paper towel into the olive oil and grease the muffin tins. Take your spoon or ice cream scooper and fill muffin tins with mixture until ¾ of the way filled. THAT'S IT! Place muffin tins in a preheated 375° oven and bake for 30-35 minutes. Have a cup of coffee, open presents and relax...it's the holidays! Let them cool and muffins will pop out of the tins -- serve and eat. Place in a 300 degree oven and roast slowly for 30-40 minutes until the tomatoes start to release their juices and begin to look "caramel" in color.Tools: Meat tenderizer Gallon sized plastic bagPlace the palm of your hand on top of the chicken breast, with the long side of the breast parallel to the edge of the cutting board. Carefully, run your knife through the middle (from top to bottom) cutting through the length of the chicken. This will yield 2 thin filets per breast.Take your date night chicken pieces (1 at a time) and slip between a storage bag (cut the left & right sides of the bag, leaving the bottom seam attached). Tenderize your chicken (using the flat side of the tenderizer) until the entire piece is an even width throughout. Use the same bag for all chicken pieces.For the batter, in a shallow dish, combine your egg, salt, pepper, parmesan cheese and milk, mix together. In a separate shallow dish, add breadcrumbs, 1-tablespoon of Parmesan cheese and salt and pepper to taste. Combine everything together with a fork.Place the chicken in the milkegg mixture and then place in the breadcrumbs. Turn so both sides are coated evenly with the crumbs. Be sure to use one hand for wet ingredients and one for dry ingredients. It will help avoid the unwanted hand mitt of breadcrumbs.Add vegetable oil to a sauté pan and place over medium heat. When the oil is hot add the chicken and lightly sauté until golden brown, approximately 5-6 minutes. Be sure to turn them over to brown the other side Plate your chicken cutlet and add a salad on top! They can be cut it into small bite-sized pieces.For the batter, in a shallow dish, combine your egg, salt, pepper, parmesan cheese and milk. Mix together. In a separate shallow dish add bread crumbs, 1 tablespoon of parmesan cheese and salt and pepper to taste. How to Make Homemade Tomato Sauce: Chef Helen Cavallo shares her recipe for making fresh homemade tomato sauce from scratch - perfect for your favorite pasta.Follow Babble Video on Twitter: https:twitter.comBabbleVideoTOMATO SAUCE FROM SCRATCH!More from That's Fresh! http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31Ingredients: 2 carrots, diced 2 stalks of celery, diced 1 yellow onion, diced 3 cloves of garlic, minced 8 plum tomatoes 23 cups of water ½ cup of red wine (you always gotta taste the wine, make sure you like it...wink, wink!) 1 cup of freshly torn basil leaves 1 tablespoon olive oil ¼ teaspoon of kosher salt (or to taste) ¼ teaspoon of chili flakes (or to taste)A fresh homemade tomato sauce is a must! Make it in bulk, freeze the left over's and pull it out for those busy nights when you don't have time to cook.Start by dicing your carrots, stalks of celery and onion. Mince your garlic. Drizzle olive oil to coat the bottom of the pot and cook over medium heat until warm. Add ingredients and allow them to sweat. The vegetables will literally begin to look like theyre sweating, releasing their juices... the longer you cook them without allowing them to turn brown the better the flavor. Add salt and a pinch of chili flakes.In a separate stock pot, boil water. Cut little "x's" into the tops of the 8 tomatoes (bottom side, not where the stem is). Place them directly into the boiling water for approx 2 minutes. When they're done, take them out of the pot and plunge them into a bowl (of ice and water) big enough to hold them all. Allow them to cool.Once the tomatoes are cooled, remove them from the water. You'll notice that the skins are separating from the flesh. Remove all the skin and coarsely chop the tomatoes. Add tomatoes to the pot with celery, carrots, onion and garlic. Add in water & wine, and stir. Allow to cook over medium low heat until the water reduces down and the flavors start to meld together, about 45 minutes -- 1 hour. Add torn basil leaves and stir.Congrats folks, you just make a simple homemade tomato sauce from scratch. You can add THAT to your bag of tricks! How to Make Spaghetti Squash and Meatballs: Chef Helen Cavallo shares her family-inspired recipe for Spaghetti Squash and Meatballs... this is one everyone's going to LOVE!Follow Babble Video on Twitter: https:twitter.comBabbleVideoMore That's Fresh http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31SPAGHETTI SQUASH AND MEATBALLSIngredients: 1 Spaghetti Squash 1 teaspoon Olive oil Tomato Sauce (whatever is your favorite or use recipe, below) ¼ teaspoon saltStart by heating up your favorite tomato sauce in a large stock pot, over medium heat. (see recipe below)Slice squash in half (lengthwise) and pull out seeds. (Don't throw them out, you can roast these at a later time, just add 1 teaspoon olive oil, salt and roast until golden brown.)Rub olive oil and salt to taste all over the flesh side of the squash you have cut in half. Place flat side down on a roasting tray and place in a 450 oven for 20 minutes until the flesh of the squash is fork tender. Take out of the oven and allow to cool.MEATBALLSWhile that's happening... Time to make our meatballs...1.5 lbs lean ground turkey (you can use, beef, pork or veal...whatever you have, it's the same recipe) 1 egg beaten ¾ cup of Italian flavored bread crumbs ¼ cup of minced fresh parsley approx ¼ cup of grated parmesan cheese salt to taste (approx ¼ teaspoon)Use a bowl big enough to hold and mix all ingredients.Add ground turkey to the bowl first, followed by the egg, and then the rest of the ingredients. Use your hands to mix everything together really well.Grab a dollop of the meat mixture (approximately 1.5 oz or 3 tbsp.) and roll between your palms until a uniformly round meatball is created. Repeat this until all the meat is made into meatballs. Place all the meatballs one by one into the tomato sauce you have cooking on the stove. Give a gentle stir occasionally so the meatballs don't stick to the bottom of the stock pot. In 20 minutes, your meatballs will be cooked through.Take your cooked spaghetti squash and scrape out the flesh with a fork, you will see that the spaghetti squash is stringy, forming ""spaghetti noodles"" as you scrape. Discard the hard outer shell.In a bowl serve,1 heaping serving of spaghetti squash followed by a dollop of tomato sauce and 2 meatballs. Add parmesan cheese to taste. Dark chocolate or bittersweet chocolate (dairy free) 1 Teaspoon vanilla extract 2 Teaspoons of honey 4 Raspberries (1 for each serving)INSTRUCTIONS:Chocolate bowls: over medium heat, set up a double boiler (a pot of boiling water on the bottom, and a heat-resistant bowl with chocolate on top). Place chocolate in top bowl, mix and allow chocolate to melt. Then remove from heat, and let cool.Next, blow up 4 small balloons, and dip them into the melted chocolate about 13 of the way up. Then set the balloons down on a baking sheet. Once chocolate has hardened, pop the balloons with a pin and remove the chocolate serving bowl that has formed. To make the pudding, place pitted and skinned avocado in food processor along with: remaining melted chocolate, coconut milk, vanilla extract, and honey. Pulse until creamy.Place pudding mixture into a piping bag (or use a resealable bag and cut the corner), squeeze the pudding through and into the chocolate bowls. So easy, you're laughing!More That's Fresh http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31PUMPKIN SOUP SERVED IN LITTLE PUMPKINS AS VESSELS1 pumpkin approximately 2-3 lbs 5 small pumpkins or gourds approx .5 lb each, slice top, remove seeds (4 to use as serving dishes and one for the floral arrangement) 2-4 carrots (depending on the size) 2-4 celery stalks (depending on the size) 1 yellow onion 3 garlic cloves 8 cups of stock (veggie or chicken stock) 2 tablespoons of olive oil (approx) Salt to taste Black pepper to taste Greek yogurt to finish Cilantro leaves (approx 6 leaves for garnish) NutmegWash pumpkin, cut off the ends and then slice in half lengthwise. Lightly drizzle pumpkin with olive oil and kosher salt. Set pumpkin on a baking sheet (with foil for easy clean up) face side down. Preheat oven to 400°. Place pumpkin in oven and let it bake for 20 -- 35 minutes depending on the size. While pumpkin is baking... Clean, peel & dice your carrots, celery, onion and garlic. Then, in a heavy stockpot, drizzle olive oil on the bottom of the pot just to coat it. Then turn the heat to medium. Place the diced vegetables in the pot and allow them to sweat (not brown), adjusting the heat so that the veggies literally look like they're sweating, releasing liquid and becoming tender. Add salt and pepper to taste, a pinch of thyme can be added, too. When they are ready, leave them in the pot and turn off the stove and wait until the butter squash is ready. Back to the oven... Remove the pumpkins and allow them to cool. Scoop out the insides, the flesh only, leaving the hard outer skin and add the flesh to your pot w the carrots, celery, onions, garlic.Place the pot back on the stove, set to medium and add the stock until all the vegetables are submerged in liquid. You may use additional stock if the consistency of the soup is too thick when it's finished. Let the stock and vegetables simmer on the stove for approx 15-20 min, again add salt and pepper to taste.Take your soup off of the heat and blend ingredients together. You can use a hand mixer or blender. Blend ingredients until the soup has a smooth, creamy consistency. To serve, drizzle olive oil around the serving bowl, add a dollop of yogurt to each serving & cilantro garnish. Use your zestergrater to grate nutmeg into the soup.Have fun!! It's so easy to make!! Warning: You won't want to share them!More That's Fresh: http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31FALL-OFF-THE-BONE TUSCAN BBQ STYLE PORK RIBSIngredients: 1 rack of baby back ribs 5 minced garlic bulbs 1 tsp onion powder 1tsp salt 1tsp paprika 1 tsp sugar 1 tsp fennel seeds ½ tsp chili flakes 2 tbs olive oilBBQ Sauce: ½ cup of Balsamic vinegar 2 tablespoons of tomato sauce, or ketchupMix all ingredients together to make a paste. Generously sprinkle salt over the entire rack of ribs on both sides, approx 1 teaspoon. Place ribs on 2 pieces of aluminum foil (for strength) add paste to ribs, both sides. Wrap ribs in foil and seal tightly. Play ribs in foil pack on a baking sheet. Place in 350-degree oven for 2 hrs.While that cooks, lets make BBQ sauce! Add ½ cup of balsamic vinegar to a saucepan and 2 tablespoons of tomato sauce or ketchup. Let mixture reduce done till it becomes thick and begins to get a dark rich color, almost black.Take ribs out of the oven, remove from foil and add BBQ sauce. Place ribs back on baking tray and add to the oven on broil setting.  http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31INGREDIENTS:2 Tablespoons olive oil ½ Cup of mushrooms quartered (baby bella, cremini, porcini, button, or whatever you have) ¼ Teaspoon kosher salt 18 Teaspoon pepper (optional) 4 Slices of bread (brioche, white, wheat, sourdough or whatever you have) 4 Eggs 1 Teaspoon cheese: fontina, mozzarella or whatever you like (optional) 1 Cup of fresh spinach Juice of ½ a lemonINSTRUCTIONS:Wash and cut mushrooms into quarters. Then add olive oil into sauté pan over medium heat. Add and sauté mushrooms until golden brown and soft. Add salt and pepper. Then set pan aside.Using a glass, cut out a circle in the center of each bread slice of choice. Drizzle olive oil in a separate sauté pan. Then place over medium heat. Put bread slices and cut out circles in pan and toast on each side until lightly brown. Remove each toasted circle and set aside. In the toasted bread remaining in the sauté pan, crack an egg in the center of the hole in the bread. Cook for about 1-2 minutes then place pan under broiler. If adding cheese let it melt while under the broiler. Cook until whites have set to your liking or for about 1-2 minutes.For the kids, place eggs in a nest on plate and put toasted circle slightly askew over the egg.For the parents plate your eggs the same way but add mushrooms and fresh spinach around the nest.
