 http:www.youtube.complaylist?list=...| RANCH LETTUCE CUPS |INGREDIENTS (Dressing):1 Cup plain yogurt ¼ Cup buttermilk or mayonnaise 3 Tablespoons finely chopped italian flat parsley 2 Tablespoons finely chopped fresh chives 1 Chopped shallot 1 Teaspoon of fresh dill Juice of 1 lemon 1 Teaspoon white vinegar ½ Teaspoon kosher salt 18 Teaspoon pepper INGREDIENTS (Salad):1 Head butter or iceberg lettuce 1 Carrot 1 Jicama or celery stalk 1 Red pepper 1 Avocado 2 Tablespoons cilantro (for garnish)INSTRUCTIONS:For the dressing, add all ingredients into a mason jar.Then tighten lid and shake vigorously until ingredients are incorporated and mixture is creamy smooth.For the salad, peel and shred 1 carrot, slice jicama or celery into thin stalks, julienne one red pepper, and slice 1 avocado. Next, wash and separate lettuce leaves from core. Each leaf forms a cup. Add ¼ of each ingredient into lettuce cup. Drizzle ranch dressing to taste, wrap lettuce cup in hand, and enjoy!| CILANTRO LETTUCE CUPS |INGREDIENTS (Dressing):1 Bunch of finely minced cilantro ½ Stalk of minced scallion (use green and white midsection of the stalk) 1 Tablespoon of soy sauce ½ Cup olive oil ¼ Cup white vinegar Salt and pepper to taste INGREDIENTS (Salad):¼ Head of red cabbageINSTRUCTIONS:For the dressing, add all ingredients into a mason jar.Then tighten lid and shake vigorously until all ingredients are incorporated and mixture is emulsifiedFor the salad, finely shred the leaves of ¼ of a head of red cabbage.Place shredded cabbage in a bowl, drizzle dressing to taste, mix and serve| CITRUS WITH FENNEL, ONION, AND KALAMATA |INGREDIENTS (Dressing):2 Navel oranges ½ Teaspoon honey ¼ Cup olive oil 1 Tablespoon of white vinegar ¼ Teaspoon kosher salt 18 Teaspoon pepperINGREDIENTS (Salad):1 Whole fennel bulb 14 of a red onion ¼ Cup kalamata or cured olives (optional)INSTRUCTIONS:Cut outer skin of both naval oranges with a knife until all skin is removed and flesh is exposed. Take one of the oranges and hold over a mason jar while running a knife in between citrus sections until flesh falls away and pith is left in your hand. Then squeeze pith until all juice falls into a mason jar.With the remaining orange, slice into pinwheels. Then, set aside. Add additional ingredients into mason jar: honey, olive oil, white vinegar, kosher salt, and pepper.Then tighten lid and shake vigorously until all ingredients are incorporated and mixture is emulsifiedFor the salad, thinly slice 1 whole fennel bulb and shave approximately 14 of a red onion. Form a well in the flour mixture, pour the eggs into the center. Slowly start to incorporate the flour into the egg. Mix well until you have formed dough. Take the dough and roll into long rolls, width should be no thicker than your ring finger. Cut the rolls into half in pieces and roll into ""marble size"" balls.Heat the oil in a saucepan, place balls into oil in batches and allow cooking till they float to the top, approx 3 minutes. Once cooked, place on paper towels, allowing them to cool.Add honey and lemon juice to the stockpot and allow them to warm up and become thinner. Once thinned, add the almonds to the pot. In a separate bowl; add the fried dough and coat the honey mixture evenly to it.  http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31INGREDIENTS (Stock):8-10 Cups of chicken stock, vegetable stock, or water. 2 to 4 Celery stocks (depending on size) 2 to 4 Carrots (depending on size) 1 Large white onionINGREDIENTS (soups):6 to 8 carrots (Depending on Size) 1 Bunch of asparagus 2 Teaspoons olive oil ¼ Teaspoon kosher salt 18 Teaspoon of pepper 1 Teaspoon of plain yogurt 18 teaspoon freshly grated ginger 1.5 lbs. Boneless skinless cooked chicken breast Juice of ½ lime 1 Handful minced cilantro 1 Baby bok choy 1 Red jalapeno (optional)INSTRUCTIONS:In a large pot, add sautéed chopped carrots, onion, and celery to stock. Bring to a boil, and then set aside to cool. Preheat oven to 400 degrees.Chop 6 to 8 peeled carrots and place them on one side of a roasting tray. Then add 1 bunch of asparagus on the other side of roasting tray. Drizzle olive oil and sprinkle salt and pepper onto carrots and asparagus. Roast the veggies in oven at 400 degrees for 12-14 minutes.For the carrot soup, put the roasted carrots and 2 13 to 3 13 cups of the boiled and cooled stock into a blender. Blend until smooth and creamy. Drizzle with olive oil and garnish with grated ginger for flavor.For the asparagus soup, repeat process by adding roasted asparagus and 2 13 to 3 13 cups of the boiled and cooled stock into a blender.  http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31INGREDIENTS:2 Tablespoons olive oil ½ Cup of mushrooms quartered (baby bella, cremini, porcini, button, or whatever you have) ¼ Teaspoon kosher salt 18 Teaspoon pepper (optional) 4 Slices of bread (brioche, white, wheat, sourdough or whatever you have) 4 Eggs 1 Teaspoon cheese: fontina, mozzarella or whatever you like (optional) 1 Cup of fresh spinach Juice of ½ a lemonINSTRUCTIONS:Wash and cut mushrooms into quarters. Then add olive oil into sauté pan over medium heat. Add and sauté mushrooms until golden brown and soft. Add salt and pepper. Then set pan aside.Using a glass, cut out a circle in the center of each bread slice of choice. Drizzle olive oil in a separate sauté pan. Then place over medium heat. Put bread slices and cut out circles in pan and toast on each side until lightly brown. Remove each toasted circle and set aside. In the toasted bread remaining in the sauté pan, crack an egg in the center of the hole in the bread. Cook for about 1-2 minutes then place pan under broiler. If adding cheese let it melt while under the broiler. Cook until whites have set to your liking or for about 1-2 minutes.For the kids, place eggs in a nest on plate and put toasted circle slightly askew over the egg.For the parents plate your eggs the same way but add mushrooms and fresh spinach around the nest. Enjoy! SAVORY Ingredients: 5 cups of cubed ½" bread (Challah or Italian with crusts on) 5 eggs 2 cups of milk 2 pears diced finely into 14" cubes ½ cup dried cranberries ½ cup of gorgonzola or blue cheese crumbled (if you buy it whole just run your fork through it like a rake and make crumbles) ¼ teaspoon of salt ½ teaspoon olive oil (to grease the muffin tins)Tools: Cutting board, knife, large tablespoon or ice cream scooper, bowl, muffin tins (for savory bread pudding) baking dish (for sweet bread pudding)Preheat your oven to 375° On a cutting board, cut the bread into cubes. In a large bowl, beat eggs and add milk, mix well. Add bread to eggmilk mixture and let the bread soak up all the liquid. While that's happening, cut up and dice your pears, nice and small into ¼"" cubes. Add pears to bowl with the bread. Add the rest of your ingredients (cheese, cranberries, and salt) to the bowl and mix well until everything looks nicely melded together. Dip a paper towel into the olive oil and grease the muffin tins. Take your spoon or ice cream scooper and fill muffin tins with mixture until ¾ of the way filled. THAT'S IT! Place muffin tins in a preheated 375° oven and bake for 30-35 minutes. Have a cup of coffee, open presents and relax...it's the holidays! Let them cool and muffins will pop out of the tins -- serve and eat. Make it in bulk, freeze the left over's and pull it out for those busy nights when you don't have time to cook.Start by dicing your carrots, stalks of celery and onion. Mince your garlic. Drizzle olive oil to coat the bottom of the pot and cook over medium heat until warm. Add ingredients and allow them to sweat. The vegetables will literally begin to look like theyre sweating, releasing their juices... the longer you cook them without allowing them to turn brown the better the flavor. Add salt and a pinch of chili flakes.In a separate stock pot, boil water. Cut little "x's" into the tops of the 8 tomatoes (bottom side, not where the stem is). Place them directly into the boiling water for approx 2 minutes. When they're done, take them out of the pot and plunge them into a bowl (of ice and water) big enough to hold them all. Allow them to cool.Once the tomatoes are cooled, remove them from the water. You'll notice that the skins are separating from the flesh. Remove all the skin and coarsely chop the tomatoes. Add tomatoes to the pot with celery, carrots, onion and garlic. Add in water & wine, and stir. Allow to cook over medium low heat until the water reduces down and the flavors start to meld together, about 45 minutes -- 1 hour. Add torn basil leaves and stir.Congrats folks, you just make a simple homemade tomato sauce from scratch. You can add THAT to your bag of tricks! Approximately 40 minutes and then allow cooling.In a sauté pan, drizzle olive oil and brown meat, cook through. Add 1 teaspoon Worcestershire sauce, 1 teaspoon of mustard. Mix completely. Add onions, carrots and garlic to pan, cook 15-20 minutes. Add tomatoes and cook for an 2 additional minutes. Allow vegetables to get tender, approx 20 minutes total.Place cooked parsnips in food processor with 1 cup of reserved cooking liquid and ¼ teaspoon salt and pulse till creamy smooth.In 4 flat squared ramekins: scoop 1 large heaping tablespoon of creamy parsnip at bottom of each dish.Then repeat same with meat and vegetables; another layer of parsnips and meat, creating 4 layers of the ingredients with parsnips on top.Place ramekins on a roasting tray and roast in oven at 400 degrees for 10-15 minutes until light brown topping forms on the top. Shake the resealable plastic bag until the mixture is even. Open and serve.For the stuffed dates, start by opening the dates down the middle with your hands and remove the pits. Then mix almond butter with a dash of cinnamon in a bowl. If you don't want to use almond butter, you can use plain yogurt or goat cheese.
