 http:www.youtube.complaylist?list=...| RANCH LETTUCE CUPS |INGREDIENTS (Dressing):1 Cup plain yogurt ¼ Cup buttermilk or mayonnaise 3 Tablespoons finely chopped italian flat parsley 2 Tablespoons finely chopped fresh chives 1 Chopped shallot 1 Teaspoon of fresh dill Juice of 1 lemon 1 Teaspoon white vinegar ½ Teaspoon kosher salt 18 Teaspoon pepper INGREDIENTS (Salad):1 Head butter or iceberg lettuce 1 Carrot 1 Jicama or celery stalk 1 Red pepper 1 Avocado 2 Tablespoons cilantro (for garnish)INSTRUCTIONS:For the dressing, add all ingredients into a mason jar.Then tighten lid and shake vigorously until ingredients are incorporated and mixture is creamy smooth.For the salad, peel and shred 1 carrot, slice jicama or celery into thin stalks, julienne one red pepper, and slice 1 avocado. Next, wash and separate lettuce leaves from core. Each leaf forms a cup. Add ¼ of each ingredient into lettuce cup. Take one of the oranges and hold over a mason jar while running a knife in between citrus sections until flesh falls away and pith is left in your hand. Then squeeze pith until all juice falls into a mason jar.With the remaining orange, slice into pinwheels. Then, set aside. Boneless skinless cooked chicken breast Juice of ½ lime 1 Handful minced cilantro 1 Baby bok choy 1 Red jalapeno (optional)INSTRUCTIONS:In a large pot, add sautéed chopped carrots, onion, and celery to stock. Bring to a boil, and then set aside to cool. Preheat oven to 400 degrees.Chop 6 to 8 peeled carrots and place them on one side of a roasting tray. Then add 1 bunch of asparagus on the other side of roasting tray. Drizzle olive oil and sprinkle salt and pepper onto carrots and asparagus. Roast the veggies in oven at 400 degrees for 12-14 minutes.For the carrot soup, put the roasted carrots and 2 13 to 3 13 cups of the boiled and cooled stock into a blender. Blend until smooth and creamy. Enjoy! SAVORY Ingredients: 5 cups of cubed ½" bread (Challah or Italian with crusts on) 5 eggs 2 cups of milk 2 pears diced finely into 14" cubes ½ cup dried cranberries ½ cup of gorgonzola or blue cheese crumbled (if you buy it whole just run your fork through it like a rake and make crumbles) ¼ teaspoon of salt ½ teaspoon olive oil (to grease the muffin tins)Tools: Cutting board, knife, large tablespoon or ice cream scooper, bowl, muffin tins (for savory bread pudding) baking dish (for sweet bread pudding)Preheat your oven to 375° On a cutting board, cut the bread into cubes. In a large bowl, beat eggs and add milk, mix well. Add bread to eggmilk mixture and let the bread soak up all the liquid. While that's happening, cut up and dice your pears, nice and small into ¼"" cubes. Add pears to bowl with the bread. Add the rest of your ingredients (cheese, cranberries, and salt) to the bowl and mix well until everything looks nicely melded together. Dip a paper towel into the olive oil and grease the muffin tins. Take your spoon or ice cream scooper and fill muffin tins with mixture until ¾ of the way filled. THAT'S IT! Place muffin tins in a preheated 375° oven and bake for 30-35 minutes. Have a cup of coffee, open presents and relax...it's the holidays! Let them cool and muffins will pop out of the tins -- serve and eat. SWEET Ingredients: 5 cups of cubed ½"" bread (Challah or Italian with crusts on) 5 eggs 2 cups of milk 2 pears diced finely into 14"" cubes ½ cup dried cranberries ½ cup brown sugar ½ teaspoon olive oil (to grease the muffin tins)Tools: Cutting board, knife, large tablespoon or ice cream scooper, bowl, muffin tins (for savory bread pudding) baking dish (for sweet bread pudding)Follow the same ingredients and directions but omit the gorgonzola and the salt and add ½ cup brown sugar to the eggmilk mixture (save the tablespoon to sprinkle sugar on top of baking tray before it goes in the oven), grease your baking tray (use a ½ teaspoon olive oil on a paper towel and coat the bottom) Pour in the mixture of bread, eggs, milk, fruits and sugar into the baking dish and level so its nice and even. Make it in bulk, freeze the left over's and pull it out for those busy nights when you don't have time to cook.Start by dicing your carrots, stalks of celery and onion. Mince your garlic. Drizzle olive oil to coat the bottom of the pot and cook over medium heat until warm. Add ingredients and allow them to sweat. The vegetables will literally begin to look like theyre sweating, releasing their juices... the longer you cook them without allowing them to turn brown the better the flavor. Add salt and a pinch of chili flakes.In a separate stock pot, boil water. Cut little "x's" into the tops of the 8 tomatoes (bottom side, not where the stem is). Place them directly into the boiling water for approx 2 minutes. When they're done, take them out of the pot and plunge them into a bowl (of ice and water) big enough to hold them all. Allow them to cool.Once the tomatoes are cooled, remove them from the water. You'll notice that the skins are separating from the flesh. Remove all the skin and coarsely chop the tomatoes. Add tomatoes to the pot with celery, carrots, onion and garlic. Add in water & wine, and stir. Allow to cook over medium low heat until the water reduces down and the flavors start to meld together, about 45 minutes -- 1 hour. Add torn basil leaves and stir.Congrats folks, you just make a simple homemade tomato sauce from scratch. You can add THAT to your bag of tricks! Shake the resealable plastic bag until the mixture is even. Open and serve.For the stuffed dates, start by opening the dates down the middle with your hands and remove the pits. Then mix almond butter with a dash of cinnamon in a bowl. If you don't want to use almond butter, you can use plain yogurt or goat cheese. How to Make Ricotta Gnocchi: Sometimes we save special meals for a night out, but why not make something wonderful right at home? Channel your inner chef with this easy gnocchi recipe that will taste like you spent way more time in the kitchen making this memorable meal.More from That's Fresh! http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31Ricotta GnocchiINGREDIENTS: 2 12 cups of ricotta ½ cup grated Parmigianino cheese ½ cup of flour (reserve 2 tablespoons for dusting) 1 beaten egg ¼ teaspoon salt to tasteServe with tomato sauce Mix all the ingredients together in a bowl. Once everything is incorporated, dust your work surface & hands with flour. Scoop out a big spoonful and add flour to surface as well. Roll the mixture on the work surface to form a long snake; the thickness should match your pointer finger. Do this to the entire mixture. Take the side of a fork and cut the snake into ½ inch pieces. Add individual pieces to a tray into 1 even layer. Boil a pot of water an add gnocchi, stir gently and once they float to the top they're done, approx 2-3 minutes. Serve with your favorite tomato sauce!These gnocchi are like clouds, light and airy... you're friends and family will cheer; you just made a restaurant quality meal! It's fresh, easy and very tasty!More from That's Fresh! http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31SHEPHERD'S PIE with CREAMY PARSNIPSIngredients: 1 12 lbs ground turkey or ground beef 1 onion diced 3 garlic gloves minced 1 tomato finely diced 2 carrots diced ½ teaspoon salt 1 teaspoon olive oil 1 teaspoon Worcestershire sauce 1 teaspoon mustard 2 cups milk 1 cup of water 4 parsnips peeled and coarsely chopped.Add milk & water to a saucepan with parsnips and cook over medium heat until parsnips are fork tender. Approximately 40 minutes and then allow cooling.In a sauté pan, drizzle olive oil and brown meat, cook through. Add 1 teaspoon Worcestershire sauce, 1 teaspoon of mustard. Mix completely. Add onions, carrots and garlic to pan, cook 15-20 minutes. Add tomatoes and cook for an 2 additional minutes. Allow vegetables to get tender, approx 20 minutes total.Place cooked parsnips in food processor with 1 cup of reserved cooking liquid and ¼ teaspoon salt and pulse till creamy smooth.In 4 flat squared ramekins: scoop 1 large heaping tablespoon of creamy parsnip at bottom of each dish.Then repeat same with meat and vegetables; another layer of parsnips and meat, creating 4 layers of the ingredients with parsnips on top.Place ramekins on a roasting tray and roast in oven at 400 degrees for 10-15 minutes until light brown topping forms on the top.
