Next, wash and separate lettuce leaves from core. Each leaf forms a cup. Add ¼ of each ingredient into lettuce cup. Take one of the oranges and hold over a mason jar while running a knife in between citrus sections until flesh falls away and pith is left in your hand. Then squeeze pith until all juice falls into a mason jar.With the remaining orange, slice into pinwheels. Then, set aside. Boneless skinless cooked chicken breast Juice of ½ lime 1 Handful minced cilantro 1 Baby bok choy 1 Red jalapeno (optional)INSTRUCTIONS:In a large pot, add sautéed chopped carrots, onion, and celery to stock. Bring to a boil, and then set aside to cool. Preheat oven to 400 degrees.Chop 6 to 8 peeled carrots and place them on one side of a roasting tray. Then add 1 bunch of asparagus on the other side of roasting tray. Drizzle olive oil and sprinkle salt and pepper onto carrots and asparagus. Spend less time in the kitchen with this simple recipe from Helen Cavallo.More from That's Fresh http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31 HEARTY BEEF STEWIngredients: 2 pounds beef chunks -- can use boneless beef chuck, or a more expensive cut but for this recipe the preferred cut is chuck 4 carrots 1 yellow onion 3 garlic bulbs 4 cups of stock (chicken or beef stock --to your liking) 2 tablespoons of olive oil (approx) kosher salt to taste black pepper to taste A good drizzle of balsamic vinegar (SEE the VIDEO)Clean, peel & cut carrots, onion and garlic into large chunks and set aside. Cut beef into large cubes (2"" pieces), drizzle olive oil to the bottom of a heavy stockpot just to cover and turn heat to medium-high. Season each batch with salt and pepper.Add beef to pot. You want to sear each piece until it is browned on all sides but not cooked through. Work beef in batches, being sure not to crowd the pan. Set aside once browned. Add carrot, garlic, onion chunks to the pot and cook approx 5 minutes. Deglaze the pan (scraping up all the brown bits from the bottom by slowly adding your stock, balsamic vinegar). Season with salt and pepper. Add beef back to the pot with the liquid w veggies. You want all contents almost submerged but not drowning. The flour from the beef and the balsamic will thicken the liquid for your stew.Turn the flame to low so that all ingredients are simmering, the idea is you want to cook the pot low and slow so that the beef has time to tenderize and cook slowly. You want to cook the beef for about 2 hrs on low heat 325 degree oven or you can put in a slow cooker set on low, start it in the morning and have it prepared by the time you get home! You can check for doneness by inserting a fork and seeing if the beef is tender. The longer it cooks tenderer and flavorful it becomes. Have fun!! It's so easy to make!! Place a spoonful of hummus, sprinkle some raisins, and add a few shredded carrots into cucumber cup. For the lettuce cups, wash and separate lettuce leaves from core. Each leaf forms a cup. So easy, you're laughing!More That's Fresh http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31PUMPKIN SOUP SERVED IN LITTLE PUMPKINS AS VESSELS1 pumpkin approximately 2-3 lbs 5 small pumpkins or gourds approx .5 lb each, slice top, remove seeds (4 to use as serving dishes and one for the floral arrangement) 2-4 carrots (depending on the size) 2-4 celery stalks (depending on the size) 1 yellow onion 3 garlic cloves 8 cups of stock (veggie or chicken stock) 2 tablespoons of olive oil (approx) Salt to taste Black pepper to taste Greek yogurt to finish Cilantro leaves (approx 6 leaves for garnish) NutmegWash pumpkin, cut off the ends and then slice in half lengthwise. Lightly drizzle pumpkin with olive oil and kosher salt. Set pumpkin on a baking sheet (with foil for easy clean up) face side down. Preheat oven to 400°. Place pumpkin in oven and let it bake for 20 -- 35 minutes depending on the size. While pumpkin is baking... Clean, peel & dice your carrots, celery, onion and garlic. Then, in a heavy stockpot, drizzle olive oil on the bottom of the pot just to coat it. Then turn the heat to medium. Place the diced vegetables in the pot and allow them to sweat (not brown), adjusting the heat so that the veggies literally look like they're sweating, releasing liquid and becoming tender. Add salt and pepper to taste, a pinch of thyme can be added, too. When they are ready, leave them in the pot and turn off the stove and wait until the butter squash is ready. Back to the oven... Remove the pumpkins and allow them to cool. Scoop out the insides, the flesh only, leaving the hard outer skin and add the flesh to your pot w the carrots, celery, onions, garlic.Place the pot back on the stove, set to medium and add the stock until all the vegetables are submerged in liquid. You may use additional stock if the consistency of the soup is too thick when it's finished. Let the stock and vegetables simmer on the stove for approx 15-20 min, again add salt and pepper to taste.Take your soup off of the heat and blend ingredients together. You can use a hand mixer or blender. Blend ingredients until the soup has a smooth, creamy consistency. To serve, drizzle olive oil around the serving bowl, add a dollop of yogurt to each serving & cilantro garnish. Use your zestergrater to grate nutmeg into the soup.Have fun!! It's so easy to make!!  http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31INGREDIENTS:2 Tablespoons olive oil ½ Cup of mushrooms quartered (baby bella, cremini, porcini, button, or whatever you have) ¼ Teaspoon kosher salt 18 Teaspoon pepper (optional) 4 Slices of bread (brioche, white, wheat, sourdough or whatever you have) 4 Eggs 1 Teaspoon cheese: fontina, mozzarella or whatever you like (optional) 1 Cup of fresh spinach Juice of ½ a lemonINSTRUCTIONS:Wash and cut mushrooms into quarters. Then add olive oil into sauté pan over medium heat. Add and sauté mushrooms until golden brown and soft. Add salt and pepper. Then set pan aside.Using a glass, cut out a circle in the center of each bread slice of choice. Drizzle olive oil in a separate sauté pan. Then place over medium heat. Put bread slices and cut out circles in pan and toast on each side until lightly brown. Remove each toasted circle and set aside. In the toasted bread remaining in the sauté pan, crack an egg in the center of the hole in the bread. Cook for about 1-2 minutes then place pan under broiler. If adding cheese let it melt while under the broiler. Cook until whites have set to your liking or for about 1-2 minutes.For the kids, place eggs in a nest on plate and put toasted circle slightly askew over the egg.For the parents plate your eggs the same way but add mushrooms and fresh spinach around the nest. Watch more videos here: http:www.youtube.comuserbabble Chef Helen Cavallo shares two breaded chicken recipes: Date Night Chicken & Chicken Tenders for the Kids.Follow Babble Video on Twitter: https:twitter.comBabbleVideoMore That's Fresh http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31DATE NIGHT CHICKEN Ingredients: 2 boneless chicken breasts 2 tablespoons vegetable oilBatter: one egg beaten ¼ teaspoon each of salt and pepper 2 cups of fat-free or low-fat milk 1 teaspoon grated parmesan cheeseCrumbs: 1 cup Italian seasoned bread crumbs 1 teaspoon grated parmesan ¼ teaspoon salt ¼ teaspoon pepperSalad: 2 oz arugula lettuce 2 tablespoons or the juice from ½ a lemon 1teaspoon olive oil ½ cup cherry tomatoes (or any tomatoes you have)Note: I used caramelized cherry tomatoes by slicing the tomatoes in ½, length wise, and placing on a roasting tray, drizzling a ½ teaspoon of olive oil on all tomatoes. Place in a 300 degree oven and roast slowly for 30-40 minutes until the tomatoes start to release their juices and begin to look "caramel" in color.Tools: Meat tenderizer Gallon sized plastic bagPlace the palm of your hand on top of the chicken breast, with the long side of the breast parallel to the edge of the cutting board. Carefully, run your knife through the middle (from top to bottom) cutting through the length of the chicken. This will yield 2 thin filets per breast.Take your date night chicken pieces (1 at a time) and slip between a storage bag (cut the left & right sides of the bag, leaving the bottom seam attached). Tenderize your chicken (using the flat side of the tenderizer) until the entire piece is an even width throughout. Use the same bag for all chicken pieces.For the batter, in a shallow dish, combine your egg, salt, pepper, parmesan cheese and milk, mix together. In a separate shallow dish, add breadcrumbs, 1-tablespoon of Parmesan cheese and salt and pepper to taste. Combine everything together with a fork.Place the chicken in the milkegg mixture and then place in the breadcrumbs. Turn so both sides are coated evenly with the crumbs. Be sure to use one hand for wet ingredients and one for dry ingredients. It will help avoid the unwanted hand mitt of breadcrumbs.Add vegetable oil to a sauté pan and place over medium heat. When the oil is hot add the chicken and lightly sauté until golden brown, approximately 5-6 minutes. Be sure to turn them over to brown the other side Plate your chicken cutlet and add a salad on top! CHICKEN TENDERS FOR THE KIDSIngredients: 2 boneless chicken breasts 2 tablespoons vegetable oilBatter: 1 egg, beaten ¼ teaspoon each of sea salt and pepper 2 cups of milk 1 teaspoon grated parmesan cheeseCrumbs: 1 cup Italian seasoned bread crumbs 1 teaspoon grated parmesan ¼ teaspoon each of salt and pepperFilet boneless chicken breasts and cut them into equal rectangular shapes for tenders. (Should yield approx 3-4 pieces per filleted breast)Cut your remaining chicken breasts, into thinner chicken tenders. Filet it right down the middle if you can. They can be cut it into small bite-sized pieces.For the batter, in a shallow dish, combine your egg, salt, pepper, parmesan cheese and milk. Mix together. In a separate shallow dish add bread crumbs, 1 tablespoon of parmesan cheese and salt and pepper to taste. Combine everything together with a fork.Place the chicken in the milkegg mixture and then into the breadcrumbs, evenly coating on both sides. Be sure to use one hand for wet ingredients and one for dry ingredients. It will help avoid the unwanted hand mitt of bread crumbs.Add Vegetable oil over medium heat to a sauté pan. When the oil is hot add the chicken and lightly sauté until golden brown, approx 5-6 minutes. Turn and sauté the other side for the same amount of time. Dark chocolate or bittersweet chocolate (dairy free) 1 Teaspoon vanilla extract 2 Teaspoons of honey 4 Raspberries (1 for each serving)INSTRUCTIONS:Chocolate bowls: over medium heat, set up a double boiler (a pot of boiling water on the bottom, and a heat-resistant bowl with chocolate on top). Place chocolate in top bowl, mix and allow chocolate to melt. Then remove from heat, and let cool.Next, blow up 4 small balloons, and dip them into the melted chocolate about 13 of the way up. Then set the balloons down on a baking sheet. Once chocolate has hardened, pop the balloons with a pin and remove the chocolate serving bowl that has formed. To make the pudding, place pitted and skinned avocado in food processor along with: remaining melted chocolate, coconut milk, vanilla extract, and honey. Pulse until creamy.Place pudding mixture into a piping bag (or use a resealable bag and cut the corner), squeeze the pudding through and into the chocolate bowls. Warning: You won't want to share them!More That's Fresh: http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31FALL-OFF-THE-BONE TUSCAN BBQ STYLE PORK RIBSIngredients: 1 rack of baby back ribs 5 minced garlic bulbs 1 tsp onion powder 1tsp salt 1tsp paprika 1 tsp sugar 1 tsp fennel seeds ½ tsp chili flakes 2 tbs olive oilBBQ Sauce: ½ cup of Balsamic vinegar 2 tablespoons of tomato sauce, or ketchupMix all ingredients together to make a paste. Generously sprinkle salt over the entire rack of ribs on both sides, approx 1 teaspoon. Place ribs on 2 pieces of aluminum foil (for strength) add paste to ribs, both sides. Wrap ribs in foil and seal tightly. Play ribs in foil pack on a baking sheet. Place in 350-degree oven for 2 hrs.While that cooks, lets make BBQ sauce! Add ½ cup of balsamic vinegar to a saucepan and 2 tablespoons of tomato sauce or ketchup. Let mixture reduce done till it becomes thick and begins to get a dark rich color, almost black.Take ribs out of the oven, remove from foil and add BBQ sauce. Place ribs back on baking tray and add to the oven on broil setting. Allow sugar and salt to dissolve; don't boil just heat it up then let the water cool. If your refrigerator is full; remember you can use a large cooler (don't forget to line it with an unscented garbage bag) or whatever vessel that can hold your turkey, add all your aromatics and squeeze juice from the citrus in as well. Add ½ bag of ice to brine and add turkey (giblets removed). Then pour another gallon of water (or orange juice) to the mixture and submerge the bird. Everyone's turkey will want to float, so add a heavy plate to keep it submerged. Place brine and turkey to the fridge (or cooler).NEXT DAY: Remove turkey from brine then pat it dry and add unsalted butter & chopped fresh herbs all over the turkey. Begin by chopping off the bottoms of the asparagus (they tend to be too fibrous and chewy) and discard. Chop off the pointy tops and place those on a roasting pan. All they need is some olive oil and salt to taste. Place into a 450 oven and roast them for 12 -- 15 minutes.While they cook, grab your vegetable peeler and the remaining asparagus. Beginning at one end, peel back ribbons of asparagus. Allow your vegetable peeler to run alongside the length of the body, until ribbons start to form. Repeat this for all the asparagus. Place these in a bowl and drizzle the olive oil to coat. Squeeze the juice of a ¼ lemon over them. When the spear heads are roasted, toss them in with the ribbons and the vinaigrette. Use your hands to toss.ROASTED ASPARAGUSIngredients: One bunch of asparagus 1 teaspoon Olive oil ¼ teaspoon or a pinch Kosher SaltFor this one we're keepin' it super simple... Preheat your oven to 450. Cut off the bottom ends of the asparagus and discard. Place the newly cut asparagus spears on your roasting pan. Drizzle the olive oil over them, salt to taste and roast for 12-15 minutes.
