 http:www.youtube.complaylist?list=...| RANCH LETTUCE CUPS |INGREDIENTS (Dressing):1 Cup plain yogurt ¼ Cup buttermilk or mayonnaise 3 Tablespoons finely chopped italian flat parsley 2 Tablespoons finely chopped fresh chives 1 Chopped shallot 1 Teaspoon of fresh dill Juice of 1 lemon 1 Teaspoon white vinegar ½ Teaspoon kosher salt 18 Teaspoon pepper INGREDIENTS (Salad):1 Head butter or iceberg lettuce 1 Carrot 1 Jicama or celery stalk 1 Red pepper 1 Avocado 2 Tablespoons cilantro (for garnish)INSTRUCTIONS:For the dressing, add all ingredients into a mason jar.Then tighten lid and shake vigorously until ingredients are incorporated and mixture is creamy smooth.For the salad, peel and shred 1 carrot, slice jicama or celery into thin stalks, julienne one red pepper, and slice 1 avocado. Next, wash and separate lettuce leaves from core. Each leaf forms a cup. Add ¼ of each ingredient into lettuce cup. Take one of the oranges and hold over a mason jar while running a knife in between citrus sections until flesh falls away and pith is left in your hand. Then squeeze pith until all juice falls into a mason jar.With the remaining orange, slice into pinwheels. Then, set aside. Boneless skinless cooked chicken breast Juice of ½ lime 1 Handful minced cilantro 1 Baby bok choy 1 Red jalapeno (optional)INSTRUCTIONS:In a large pot, add sautéed chopped carrots, onion, and celery to stock. Bring to a boil, and then set aside to cool. Preheat oven to 400 degrees.Chop 6 to 8 peeled carrots and place them on one side of a roasting tray. Then add 1 bunch of asparagus on the other side of roasting tray. Drizzle olive oil and sprinkle salt and pepper onto carrots and asparagus. Roast the veggies in oven at 400 degrees for 12-14 minutes.For the carrot soup, put the roasted carrots and 2 13 to 3 13 cups of the boiled and cooled stock into a blender. Blend until smooth and creamy.  http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31INGREDIENTS:2 Tablespoons olive oil ½ Cup of mushrooms quartered (baby bella, cremini, porcini, button, or whatever you have) ¼ Teaspoon kosher salt 18 Teaspoon pepper (optional) 4 Slices of bread (brioche, white, wheat, sourdough or whatever you have) 4 Eggs 1 Teaspoon cheese: fontina, mozzarella or whatever you like (optional) 1 Cup of fresh spinach Juice of ½ a lemonINSTRUCTIONS:Wash and cut mushrooms into quarters. Then add olive oil into sauté pan over medium heat. Add and sauté mushrooms until golden brown and soft. Add salt and pepper. Then set pan aside.Using a glass, cut out a circle in the center of each bread slice of choice. Drizzle olive oil in a separate sauté pan. Then place over medium heat. Put bread slices and cut out circles in pan and toast on each side until lightly brown. Remove each toasted circle and set aside. In the toasted bread remaining in the sauté pan, crack an egg in the center of the hole in the bread. Cook for about 1-2 minutes then place pan under broiler. If adding cheese let it melt while under the broiler. Cook until whites have set to your liking or for about 1-2 minutes.For the kids, place eggs in a nest on plate and put toasted circle slightly askew over the egg.For the parents plate your eggs the same way but add mushrooms and fresh spinach around the nest. Place in a 300 degree oven and roast slowly for 30-40 minutes until the tomatoes start to release their juices and begin to look "caramel" in color.Tools: Meat tenderizer Gallon sized plastic bagPlace the palm of your hand on top of the chicken breast, with the long side of the breast parallel to the edge of the cutting board. Carefully, run your knife through the middle (from top to bottom) cutting through the length of the chicken. This will yield 2 thin filets per breast.Take your date night chicken pieces (1 at a time) and slip between a storage bag (cut the left & right sides of the bag, leaving the bottom seam attached). Tenderize your chicken (using the flat side of the tenderizer) until the entire piece is an even width throughout. Use the same bag for all chicken pieces.For the batter, in a shallow dish, combine your egg, salt, pepper, parmesan cheese and milk, mix together. In a separate shallow dish, add breadcrumbs, 1-tablespoon of Parmesan cheese and salt and pepper to taste. Combine everything together with a fork.Place the chicken in the milkegg mixture and then place in the breadcrumbs. Turn so both sides are coated evenly with the crumbs. Be sure to use one hand for wet ingredients and one for dry ingredients. It will help avoid the unwanted hand mitt of breadcrumbs.Add vegetable oil to a sauté pan and place over medium heat. When the oil is hot add the chicken and lightly sauté until golden brown, approximately 5-6 minutes. Be sure to turn them over to brown the other side Plate your chicken cutlet and add a salad on top! CHICKEN TENDERS FOR THE KIDSIngredients: 2 boneless chicken breasts 2 tablespoons vegetable oilBatter: 1 egg, beaten ¼ teaspoon each of sea salt and pepper 2 cups of milk 1 teaspoon grated parmesan cheeseCrumbs: 1 cup Italian seasoned bread crumbs 1 teaspoon grated parmesan ¼ teaspoon each of salt and pepperFilet boneless chicken breasts and cut them into equal rectangular shapes for tenders. (Should yield approx 3-4 pieces per filleted breast)Cut your remaining chicken breasts, into thinner chicken tenders. Filet it right down the middle if you can. They can be cut it into small bite-sized pieces.For the batter, in a shallow dish, combine your egg, salt, pepper, parmesan cheese and milk. Mix together. In a separate shallow dish add bread crumbs, 1 tablespoon of parmesan cheese and salt and pepper to taste. How to Make Spaghetti Squash and Meatballs: Chef Helen Cavallo shares her family-inspired recipe for Spaghetti Squash and Meatballs... this is one everyone's going to LOVE!Follow Babble Video on Twitter: https:twitter.comBabbleVideoMore That's Fresh http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31SPAGHETTI SQUASH AND MEATBALLSIngredients: 1 Spaghetti Squash 1 teaspoon Olive oil Tomato Sauce (whatever is your favorite or use recipe, below) ¼ teaspoon saltStart by heating up your favorite tomato sauce in a large stock pot, over medium heat. (see recipe below)Slice squash in half (lengthwise) and pull out seeds. (Don't throw them out, you can roast these at a later time, just add 1 teaspoon olive oil, salt and roast until golden brown.)Rub olive oil and salt to taste all over the flesh side of the squash you have cut in half. Place flat side down on a roasting tray and place in a 450 oven for 20 minutes until the flesh of the squash is fork tender. Take out of the oven and allow to cool.MEATBALLSWhile that's happening... Time to make our meatballs...1.5 lbs lean ground turkey (you can use, beef, pork or veal...whatever you have, it's the same recipe) 1 egg beaten ¾ cup of Italian flavored bread crumbs ¼ cup of minced fresh parsley approx ¼ cup of grated parmesan cheese salt to taste (approx ¼ teaspoon)Use a bowl big enough to hold and mix all ingredients.Add ground turkey to the bowl first, followed by the egg, and then the rest of the ingredients. Use your hands to mix everything together really well.Grab a dollop of the meat mixture (approximately 1.5 oz or 3 tbsp.) and roll between your palms until a uniformly round meatball is created. Repeat this until all the meat is made into meatballs. Place all the meatballs one by one into the tomato sauce you have cooking on the stove. Give a gentle stir occasionally so the meatballs don't stick to the bottom of the stock pot. In 20 minutes, your meatballs will be cooked through.Take your cooked spaghetti squash and scrape out the flesh with a fork, you will see that the spaghetti squash is stringy, forming ""spaghetti noodles"" as you scrape. Discard the hard outer shell.In a bowl serve,1 heaping serving of spaghetti squash followed by a dollop of tomato sauce and 2 meatballs. Add parmesan cheese to taste. Warning: You won't want to share them!More That's Fresh: http:www.youtube.complaylist?list=PL7CA4CB7DB6667D31FALL-OFF-THE-BONE TUSCAN BBQ STYLE PORK RIBSIngredients: 1 rack of baby back ribs 5 minced garlic bulbs 1 tsp onion powder 1tsp salt 1tsp paprika 1 tsp sugar 1 tsp fennel seeds ½ tsp chili flakes 2 tbs olive oilBBQ Sauce: ½ cup of Balsamic vinegar 2 tablespoons of tomato sauce, or ketchupMix all ingredients together to make a paste. Generously sprinkle salt over the entire rack of ribs on both sides, approx 1 teaspoon. Place ribs on 2 pieces of aluminum foil (for strength) add paste to ribs, both sides. Wrap ribs in foil and seal tightly. Play ribs in foil pack on a baking sheet. Place in 350-degree oven for 2 hrs.While that cooks, lets make BBQ sauce! Add ½ cup of balsamic vinegar to a saucepan and 2 tablespoons of tomato sauce or ketchup. Let mixture reduce done till it becomes thick and begins to get a dark rich color, almost black.Take ribs out of the oven, remove from foil and add BBQ sauce. Place ribs back on baking tray and add to the oven on broil setting.
