Popcorn Chicken Popcorn chicken makes a great appetizer. If you are not familiar with popcorn chicken, it is basically like chicken nuggets, only smaller. seasoned flour mixture and panko bread crumbs. using panko bread crumbs is it leaves the chicken bits nice and crispy. The chicken pieces are double breaded and then fried in the deep fryer. You can cut the chicken up however you want; either into bigger or smaller pieces. Popcorn chicken typically uses really small pieces, but this requires a lot of work so you may want to make them a little biggerIngredientsDirections1 tsp Black pepper powder 1 12 tbsp Chaat masala 500 grams Chicken, boneless 12 cup Corn flour 1-2 number Eggs 1 tbsp Lemon juice 12 cup Maida (all-purpose flour) 1 tbsp Marjoram spice 0 Oil for deep frying 1 tbsp Parmesan cheese (optional) 2 tsp Red Chili powder 0 Salt to taste Wash chicken and cut into small pieces. Put them in a bowl and season with salt, red chilli powder, black pepper powder, lemon juice and mix well. Marinate in the fridge for few hours. In a dish, take ½ cup corn flour, ½ all-purpose flour (maida), and combine them together. Add little salt and red chilli powder, mix and keep aside. Whisk 1 or 2 eggs in a bowl and keep aside. In another tray, add all-purpose flour and put in the chicken pieces and coat well with the maida flour (this helps in absorbing the excess moisture). Take the coated chicken pieces and drop them in the egg mixture and coat them well. Take pieces of chicken and coat them with the spiced flours, remove and shift them into a colander and toss them to remove the excess flour. Heat oil in a pan on medium heat and when the oil gets hot, add the chicken pieces and deep fry till they get nice and crispy. The chicken pieces should get slight golden in colour. Remove, drain oil. In a bowl, add some chaat masala, parmesan cheese (optional), marjoram spice, and mix the ingredients well. The recipe we suggest here is the base recipe for croquettes, made only with potatoes, flavoured with cheese, pepper and nutmeg. Let's see together what ingredients we'll need: For the croquettes: • 2,2 lbs (1 kg) of mealy potatoes (red are better) • 1 cup (100 g) of grated parmesan cheese • salt pepper • nutmeg • 2 yolks For breading: • 2 medium eggs breadcrumbs • vegetable oil for frying (peanut is better) Let's make together the potato croquettes: Begin by washing the potatoes: leave them whole and with the skin on. Then boil them in a pressure cooker for at least 20 minutes, adding some salt; if you have a normal pot, you can fill it with water to cover all the potatoes... and cook for at least 40 minutes. When the potatoes are cooked, allow them to cool a bit, then remove the skin. At this point, pass them through a potato masher... and collect the resulting puree in this bowl. Now just add the 2 yolks, the parmesan cheese, pepper, salt and some grated nutmeg. If you find the mixture a bit dry, you can add some of the remaining egg whites. After blending the mixture, take a small amount, I've taken 1 oz (35 g) for example, and form into a cylinder. Now we're ready to dip into beaten egg... and coat with breadcrumbs. Go on this way with all the remaining croquettes. When all the croquettes are breaded, it's time to fry them: heat the oil to 350°F and dip 3-4 croquettes at a time in the oil; let them turn golden brown, then drain on kitchen paper.
